    HEALTHY ZUCCHINI BREAD RECIPE
    1.75 cups white whole wheat flour
    1/2 teaspoon kosher salt
    1 teaspoon baking soda
    1 teaspoon cinnamon
    1/4 teaspoon nutmeg
    1/2 cup coconut sugar
    2 eggs
    1/4 cup unsweetened almond milk
    1/3 cup melted coconut oil
    1 teaspoon vanilla extract
    1.5 cup shredded zucchini, (1 large or 2 small zucchini)
    1/2 cup chopped walnuts
    INSTRUCTIONS
    Pre heat oven to 350 Fahrenheit.
    Grease a 9-inch loaf pan with coconut oil, butter or cooking spray.
    Grate zucchini on the small holes of a box grater. Set aside.
    In a large bowl, combine white whole wheat flour, baking soda, salt, cinnamon, nutmeg and coconut sugar.
    In a medium bowl, combine eggs, coconut oil, unsweetened almond milk, and vanilla extract. Whisk together and then pour the wet ingredients into the dry and stir until everything is just combined and you have a nice thick batter.
    Add the zucchini and walnuts to the batter and mix until evenly distributed.
    Pour batter into prepared loaf pan and top with extra walnuts (if desired!).
    Bake for 50 minutes or until set through and a toothpick comes out clean. Cool and enjoy!
    Makes 12 slices.

    Love these, have made them twice, on my list to make again. Cut oil back a little and used applesauce in its place. Made them into muffins instead of loaf. YUM!!!

    I made the zucchini bread and it is delicious. The hardest part was shredding the zucchini, it does take a while but it came out great. I used almond flour and monk fruit sweetener since I’m doing keto. Will make it again in the summer time 😋 Thanks for the recipe.

    Wow! I made this today. It is delicious! Thanks so much for this recipe. My zucchini must be gigantic since I have enough left to try all of your other recipes and I didn’t do a box grater but rather an appliance called a Salad Shooter....got it done in no time and my shreds are larger than yours Dani....but still in your words “Mmm. Mmmm. MMMMM!” This recipe is a keeper!

    Hello Dani, I had 5 yellow squash and 2 green zucchinis. Decided to blanche two green zucchinis and freeze for fish food and use the yellow squashes to make, "zucchini" bread.
    The total bake time took over 60 minutes at 350F. The batter made two 9-inch loaves.
    I loosely followed the recipe, with these modifications; different Flour, used diced pecans, added additional 0.25C white chocolate and 1T pure Maple syrup.

      Question, I went to the doctor and found out that reducing glutton can help me with my autism. But I have a serious issue when it comes to vegetables that causes me to get sick. Doctor can’t tell if I’m allergic to some type of chemical in them or if my body thinks it a disease. I can all fruit but mango and pineapple fine. U have any recipes for a sweet and tangy flavor loving type of guy. I just want to be health man.

      @@WalStreet Try a gluten free baking mix from Pamala's (that may be the easiest fix for you) or try Cassava Flour. If you can afford it, buy local produce or organic produce. If you can't afford that peel the skins off the veg and fruits. Chemicals are on most things as I have a similar issue. Never eat the skin of a potato unless it's organic, ditto for apples. If you get a food allergy test (blood test) it can rule out or in the food. If you're not allergic to the food then it's very likely it's the chemicals. Round up is one of the worst and it's in a lot of stuff and all wheat except organic wheat ( they spray the plants with it 3 days before harvest to get a higher yield.)

    I followed your Zucchini Bread recipe Dani (my second time making it), and Oh my goodness, so good. The first time I didn't put the extra sugar, and the first thing my husband said after raving about how good it was, was that it could've been a tad sweeter. Well, I just pulled it out of the oven about 20 mins ago, and cut into it. And OMG, this bread is soooo good. This time I added an extra 1/4 cup of raw cane sugar - - absolutely delicious Dani. Thank you. I may not get much of it after Hubby cuts into it a few times.😄

    For the gluten free people... Cassava flour works great in baking things like this. It’s a flour known to be good for gut health too 😊

      Remember to add extra liquid or use a little less than a 1:1 substitute for wheat flour. Cassava absorbs more liquid than wheat but a great sub.

    Sounds very good but I can't have the flour or the sugar... very often anyway lol. I bet some chopped up dates would be very good in there as well. When i was a boy I bought what was called Dromederry date nut rolls in a can.I thought they were great but guess they quit making them cause i don't see them anymore in the store. Love your videos!

    Thanks, Dani. I love ALL your recipes (your coconut pancakes, baked chicken breast and many others are on the top of my list)! The only problem I cannot eat gluten or nuts (other than coconut). Can I replace it with coconut flour?

      Hi! Coconut flour would not be an even swap but you can try a gluten free flour mix which would be 1:1 if you wanted to swap it in :)

      Hi Lori! You can't really swap coconut flour for the wheat flour without adjusting the other ingredients. I'm going to have to work on a coconut flour zucchini bread for you.

      Maybe spelt flour or light/white spelt flour since she uses white whole wheat flour

    Im just making it and looks very good, thank you for the recipe. In the video you said 1 tsp of cinnamon, but in the letters that appears said 1/2 tsp., Just to be sure😊👍

    Using a juicer (I have a Breville) eliminates having to use a box grater and then straining the excess liquid. The machine does it all for me and conveniently separates it into 2 containers.

      You're very welcome. You can't really sub the almond flour one-for one. You would have to tweak the recipe a bit. I'll have to work on a recipe for you all that is made with almond flour because it seems that a lot of people would like that.
