I dont mind my ribs/meats being slightly charred but when my dad was at the grill he at times used to put a pot of ice with the top of the pot slightly open on the grill and close the grill to not only bring the temp down but to steam them at the same time. Works every time.

The flies come in groups. Get you one of those fly traps from the Home Depot and knock em out by the bunch. Those ribs were cooked just right. 👍
