    Loved this video Emmy.
    A bit of history behind the making of the spiced bun - the concept of an Easter bun/hot cross bun was introduced to Jamaica by the English, when they colonised the island (around the 1600s). However, Jamaicans added their own twist to the recipe by using molasses instead of honey, and adding spices and dried fruits.
    Alongside the hot cross buns, the nursery rhyme was also introduced:
    Hot cross buns!, Hot cross buns!
    One a penny, two a penny, Hot cross buns!
    If you have no daughters, Give them to your sons.
    One a penny two a penny, Hot cross buns!
    Nowadays, the rhyme is mostly sung by older Jamaicans, as it was once used by peddlers to sell the buns.

      Hot cross buns are very popular in Australia too...some are spiced with or without fruit, some have chocolate chips and some have apple cinnamon. That song you mentioned is also sung (mainly to kids) in Australia too and is pretty common.

    I'm Jamaican and I've been watching your videos for yeaaars (from when you used to make popin cookin videos) and this made me very happy lol
    You should try flattening and toasting the slices of bun and then adding cheese, it tastes a lot more caramelized and has more depth

    something Jamaican that isn't jerk chicken or beef patties, well dang. Nice! This threw me down a whole new rabbit hole of Jamaican food. Going through the comments and stuff I've read just by looking up boula does make me realize a lot of tropical and equatorial nations all around share food ideas to a degree (my own family is Indonesian and I see some similar stuff here), we just execute them differently.

    🇯🇲🇯🇲🇯🇲🇯🇲I’m a Jamaican culinary student and at home I make a cheese sauce with tastee cheese I usually do a little bit of roux lots of milk and I melt it on high heat stirring constantly. I obviously use a large grater to grate the cheese or else it will take forever to melt. And I season it with lots of black pepper and chopped pepper like pickled Jalapeños and it’s delicious in macaroni dishes and even just on bread as a spread and in sandwiches. I eat it with chips and it’s delicious. The recipe is easy and it’s dependent on your preference of thickness.

    The amount of whiplash I had seeing Emmy eat Tastee Cheese and Bulla in the thumbnail.. There's a reason why we only buy the cheese for Christmas and Easter, it's expensive! 😭While you're at it you should try Sorrel and Jamaican black fruit cake next for Christmas!

    I love seeing new people trying foods from my culture. I’m glad that you enjoyed. If you ever want to make a bun yourself in the future (they’re not that easy to come by outside of the Easter season), here’s some tips for those hard-to-find ingredients you mentioned.
    1. For the stout, Dragon’s Stout is definitely hard to find in the states. My mom typically uses Guinness stout instead, which is a great alternative.
    2. Browning can be found in Walmart sometimes, depending on how extensive your local Walmart’s International aisle is. If you can’t find it, I recently found that that it is relatively simple to make at home. Just caramelize some brown sugar, add in some boiling water, and salt, and there you go.

    I'm definitely laughing... at myself. You're teaching me how to open this can. In all my Jamaican life, I have never opened both sides of that can. I've never read the instructions on the can. I had no idea that was there... 😄. This explains why I always disliked opening the can. It was so difficult. I've learnt something. I will definitely do that going forward. It looks like you were incidentally doing this at one point but just a tip... rolling the can to try to get it off the sides of the can should help immensely. I'm drooling watching you eat that bun and cheese. The way you say "boola" (bulla) has me giggling to myself. Cut the rest of that cheese and store it in cling film. There's a smaller size as well.

    You can use Guinness instead of Dragon Stout. I definitely enjoyed this. I love seeing our food get recognized and enjoyed. As for the cheese, aluminum foil will keep it soft in the refrigerator. Donate the rest to a Jamaican near you lol 🇯🇲 🇯🇲 🇯🇲 🇯🇲 🇯🇲

      Guinness isn't dark. She can use Malta sold in supermarket. Or any dark stout.
      Also browning is just burnt & melted sugar. She could make that herself.

    I lived near a Jamaican restaurant in Germantown section of Philadelphia and got introduced to Jamaican food there. Being vegetarian, the Jamaican spot became one of my favorite takeout go tos.

    Emmy you’re a great food descriptor. As a Jamaican I’m always weary of people, trying and describing or food, because most of the “Jamaican food“ that people try outside of Jamaica is not actually our food. So many people that think they have had Jamaican food actually haven’t. You described this really really well not just the flavors but the textures too.

    If you are feeling adventurous enough to make bun from scratch:
    • Sub out Dragon Stout for Guinness - it has a similar enough flavour profile
    • Browning is dark, caramelized sugar. Dark almost to the point of burning it. Took me months to master the technique but it adds colour and depth of flavour to meats and dark cakes

    You can still buy spiced bun loaf in the UK. We tend to eat it toasted and buttered. 🙂 Also, in the north of England, we eat Wensleydale cheese with Christmas cake, which is a similar sweet/salty combination.

    Just to add to your knowledge, here in the north of England it’s very common especially around the Christmas holidays to be offered a piece of a strong cheese on top of a slice of very heavily fruited Christmas cake. And remember that the fruit in the cake is dried and soaked with alcohol before cooking then the cake gets pierced and more alcohol added several times after baking. Interestingly most of the spices incorporated in the cake are originally imported from the West Indies, such as ginger, mace, nutmeg and the oils of various citrus fruits.

      Yes lots of cross cultural pollination. I've often thought Jamaican patties are a spicier, punchier version of the Cornish pastie, minus the root veg of course. But then, many regions of the world has some version of minced meat in a pastry casing. Funny that.

      Sounds so yummy and familiar. My great gran and my gran her daughter used to start in September every year and make rum or brandy soaked fruit cake. They were from Germany.
      They had so many types of fruits and candied bits and peels and nuts.
      I know that a few different types of raisins were soaked in a brandy sugar syrup for a few days before everything went together.
      And how they carefully open the wrapped and tinned fruitcakes once a week to soak a bit more brandy sugar syrup in.
      I do know they used a dark rum once as I think my grandpa found a good deal in it.
      You'd think it would be terrible sweet/alcohol tasting but by the time Thanksgiving and Christmas rolled around and you opened and cut it it was not alcoholic at all. It just tasted wonderful.
      I do remember my dad eating it with his really old cheddar(smelled like feet to me )

    It’s very traditional in England to have cheese with fruitcake, especially in Yorkshire and other northern counties. Christmas cake is best full of brandy and dried fruit eaten with very sharp Cheddar cheese and of course, a nice hot cup of Yorkshire tea. Delicious!

    I love this cheese soooo much! I'm from The Bahamas and my mother is Jamaican and she introduced our family to all the Jamaican goodies. I usually buy the water crackers and a slice of this cheese (cause its really really expensive here) and just savor it . Its just so creamy, I need to buy a slice when I go home.🤤🤤

    Literally just went to the Jamaican market by my house and got some of that cheese yesterday. So I could have it as a treat during Thanksgiving weekend, lol. It's one of my favorite things on the planet but it's expensive so I don't have it often. The cans that we usually get are half that height though. 🤔 My mom goes for the bullah, but I'm definitely Team Bun. Love it!!!

    I was about to recommend Cougar Gold from WSU. Fantastic cheese. I love the Tastee cheese too, I vacuum seal half pound chunks to keep it from going bad. Cheese and Bun are a wonderful Jamaican treat. I’m a Floridian, so we get lots of Caribbean food.

    Hi Emmy. Browning is bottled caramelised sugar, made with: caramel, water, modified food starch and sodium benzoate. However, we make it at home by burning sugar and adding the water to cause it to steam up and become the browning liquid. I hope that is helpful. 😁🇧🇧🇧🇧

    I was making mac and cheese one day and run out of velveeta.. there was a can of tastee cheese hanging around in my pantry lol had to use for my mac and cheese and the kids loved it!!!!!!

    I don't know how she does it, but my Jamaican wife can slice the cheese into pieces that exactly match the amount of bun we have. She's a wizard. Glad to see you having one of my favorite Easter-time dishes.

    I love bulla. I slice it and grill it under wat u guys call ur broiler. Just gently brown it then I butter it. Mmmmm! Once u’ve done that u can put strawberry jam/jelly with ur cheese. Grilling it changes the texture of the bulla cake and it becomes crunchier from the sugars. Nice cup of English tea, perfect and I’m Cypriot born in England 🏴󠁧󠁢󠁥󠁮󠁧󠁿 with great Jamaican friends. U can flufernutter it too or salami it xx

    I knew this day would come. And Emmy's description of one of my favorites is gracefully done. Wait, until she tries Jamaican raisin bread. She can use some of the cheese with it. You can grate the cheese to Mac an cheese recipe. Or maybe a spaghetti sauce dish. The possibility is endless with Tastes cheese.

    The bulla and bun looked really dry in this video. Next time try to get the HTB spice bun OR National bun;those brands are more moist and tasty.😊

    I love Bun and cheese I'm British African but grew up around Jamaicans. True say if I knew the cheese came from a can I might not love it as much. What you don't know won't hurt you lol 😂 Big up Jamaica 🇯🇲 not one piece of food I've tried and didn't like. Mi yam everything 😂

    Grew up in Jamaica, my siblings and I always had bun and cheese for Easter with tastee cheese. It’s been so long 😊 🇯🇲. I also miss cheese patty with coco bread for the Tastee’s patty place

    Having mature cheddar on fruitcake is a traditional English thing so this definitely makes sense as a combo. I hate fruitcake so it's not for me but I get it.

Spice bun sounds so nice, idk if it's a thing in Jamaica itself or just over here (I'm irish) but we have a sticky ginger cake called Jamaica ginger cake that I always assumed was just called that due to the spices being from there (is ginger even from Jamaica or did child me just assume?) but it looks similar in density to the spice bun so it's probably an adaptation of a Jamaican recipe originally!

      We got some ideas from the British and likely Irish which I take it they got inspired by the natives too

    More options for your cheese: grate desired piece of cheese, then place on white bread with your favorite jam or jelly to make a sandwich. Cut the edges of your sandwich and discard the edges. Cut sandwich into squares or triangles, then enjoy this party finger food. 🇯🇲🇺🇸

    I normally add butter to add moisture! Also always try to get fresh bun or bulla that are not dry.
