I'm from Hawaii nei. Planning to make loco moco in a few days so when I came across this in my "recommend" I had to take a moment to see your version of our beloved comfort meal which is very popular for breakfast. And I do use plastic gloves while mixing the meat lol. Those are some massive hamburger steaks, those will require two over easy eggs. 👍Looks ono. Mahalo.
I thought it was wood mulch made especially for growing mushrooms. I thought they ground up hardwood, let it "ferment" in big piles, and right before they use it they sterilize it with steam. Maybe someone does do that.
Thanks for the video! FYI i used to work on a mushroom farm, we used to get huge loads of chicken manure and straw delivered that we then put into special composting tunnels using an ocillating convayer belt. We filled it floor to ceiling 20' wide and 12' tall and about 50' deep! It would stay there for a week till the composting process made it really hot. We then reversed the process taking it all out and putting it into another tunnel for another week. Honestly the amonia is so strong when you first get the job you feel like you can hardly breath, so supprising how you het used to it after a coulle of weeks. What i didnt expectnis that the amonia turned my hair from broe to red!! I soon realised why all the guys had crew cuts😂 some who worked there were put off and never ate mushroom again. I however still enjoy them very much. They are amazing things. The very best in my opinion are wild chanterelle , atnleast you know for sure the little bits on them are just from the forrest floor and not chicken poop!!!!
I love the care and thought behind each step. I’m gonna try making this tonight with my homemade beef broth! I don’t have demi glace on hand but I’m sure my husband won’t mind 🤣❤️

I made the most delicious Swedish Meatball dish the other night Thanks to your channel! Sauteed the mushrooms, onions, and garlic, in a red wine reduction and spiced them up with some brown mustard .. .. I'm still eating on it.

I was thought In culinary that you never clean mushrooms in water they will soak up the water like a spurge and ruin the flavor, you use a brush to clean them.
As a culinary student at Le Cordon Bleu in Paris I was taught to quickly plunge them in a bowl of water- like in this video- and dry then off. I definitely don't want to eat that brown stuff😊

This guy's positivity is great. Cooking can be intimidating.
The black stuff debris on the mushrooms is peat moss. It's what they grow the shrooms in these days. So much better than the manure they used to use.
