    Yelling in frustration, cut thumbs that are not edited out, and a tangent discussing kidney stones - this type of show would NEVER be allowed to air on network TV or the cooking channel, but it's SO MUCH BETTER! Much more authentic and hilarious!

    Cafe 100 in Hilo Hawaii invented loco moco.
    I live in Hawaii and here is some unsolicited input: Loco moco is a staple here. It is a masterpiece/disaster of a dish. You must consume loco moco on a semi regular basis or be banished from the islands. There is more BAD loco moco than there is GOOD loco moco. You must search for the place that makes it right.
    I would also say over 95% of places that offer loco moco do not make gravy from scratch. I would bet almost all places, outside of high end restaurants that elevate the dish to fine dining (I have seen lamb chop, foi gras quail egg loco) use the pre-packaged add water and boil products. Your gravy looked awesome.
    Your rice? Not so much. Here we ONLY use short grain calrose rice, which you may also have used but it looked really mushy. The green onion and Chinese parsley (which is what cilantro is referred to here) was a great idea, you may see furikake used here more often. Not saying it is better because I know you are interpreting this dish.
    The meat patty was perfectly done and probably outclasses most patties here. Often carmelized onions are offered and sometimes mushrooms.
    One egg is standard but I always upgrade to three eggs. Sriracha and shoyu plus black pepper must be on the table.

    I would recommend rinsing the rice before cooking it to get rid of the starch. You get individual rice grains that are fluffy and cooked perfectly instead of goopy rice. Recipe looks amazing!

      i think i'd rather have "goopy*-textured rice than individual grains scattered all over. the rice is functioning as the burger's bed; it ought to hold together for ease in scooping up forkfuls of burger+.

    I'm late, but hope Sam sees this: I had a kidney stone a few years back and managed to drive it out within 3 days with this method! Try drinking about 60 oz of water in the shortest amount of time, let's say in 15 minutes - the less the better - after that just wait for it to flush your kidneys, do this like 3 times a day in like 4-5 hour intervals. Also moving, jumping and bending helps. Hope you get better! Love the cooking show!

    It's hard to beat green onions on almost anything. Love the sesame hot chili idea on the egg. No Challulah needed. Good looking burger too. Cooked just right. Glad to see you working that Salt Mill. It's adds much class to the act.

    Sam I have been in the industry for 27 years. Dishwasher to area supervisor, literal thousands of hours of cutting, chopping, slicing & dicing. I have never once cut myself.

    Sam, cooking tip: Dont add salt your ground beef before making a burger. It causes the meat to constrict and will make it tougher. Season it after putting on the grill. Leads to a more tender and moist burger.

    I save the mushroom stems, chop them very fine, and add them to gravy and spaghetti sauce. Delicious.
