I learned to make basic roux when I was a kid. Mom used it to make my favorites: creamed tuna with peas on toast and SOS. Now I make cream soups and gravy with roux. I get lovely flavor from deglazed pans, some butter, flour and seasonings. It ain’t fancy at all! It’s that same gravy Mom always made. Easy! Yum!
Well, now I know why my parmesan dishes come out weird. Thank you soooo much for letting me know to take it off the heat before adding! Makes a world of difference! 😘

As much ingredients as possible all fresh and personally hand prepared. No shaking in dried herbs from a small jar. Just all the flavors with twice the fun in cooking. The herb stem bouquet garni, was new to me. Thank you! Just an excellent, refreshing video of a fantastic recipe.
I’m amazed with the tips I’ve picked up. Like how you shredded the chicken. The cold stock going in the sauce (tho I use a hand whisk when making sauces. No lumps). So thanks from a happy 73yo for the recipe which I’ll definitely try.
I love recipes like this. I can think of many variations that would be equally delicious: different cheeses, sliced sausage, ham, mushrooms, peas, or other veggies, bow tie pasta or other forms of pasta, etc. I think I might be more inclined to mix most of it together instead of layering it. I don't think it would make much difference. The genius element here is the BACON. I also love the spinach and fresh herbs in your recipe. My herb garden didn't do as well this year. It's a very small area. I may just pull everything out next spring, even the perennials, amend the soil with a lot more compost, and start again.

So thanks to all of you from a year ago! So glad this crossed my path between current events news and recipes for a rainy day. And it brought back a happy memory of so many years ago when it my stepson's turn to invite mom to bring luncheon for the class. He requested Chicken Alfredo. Gratefully I had a pro cook to help with the large order & delivery to his school. 37 years and I haven't thought of that happy day but a time or two so another great big thank you for that gift. The smile has not left & this will not be forgotten. No dust in the cyberspace collection except to dust off the memory. He will have to get this video. Im definitely making this. And I am gonna use my poaching liquid in place of chicken stock. Or maybe just poach my chicken in my homemade chicken stock I always have on hand because I pressure can my chicken stock. Thanks 😊

Very well done. I want to learn something new on sauces and gravies. I am going to plant a kitchen garden. I am a goat farmer. Do you cook goat meat. I also enjoy cooking peppers. My sister has told me to enjoy cooking. It is not suppose to be a chore. I need to learn more.
