I have the same ingredients minus the tomato paste and instead of maggi stock I used coconut milk, slow cooked for 15-20 mins then baked for 30-45 mins. It's what I learned from my tito in Pampanga. But I want to try this version of chef tatung, slow cook lang and no need to bake❤

The Ilongo version uses coconut milk, and no Maggi and tomato paste. The turmeric will give the necessary color. The Spaniards use saffron. The recipe is Middle Eastern, introduced to Spain almost 1000 years ago, probably through Morocco. It was originally saffron from Morocco. Turmeric is the new, cheap ingredient. It gives the Valenciana a different taste and smell too. If you like turmeric, go for it. Saffron, Carmencita brand, is available in Ayala Mall groceries. It gives Valenciana the orange color and taste that we know and love. Valenciaba is a complete meal, so it should be enjoyed by itself. The rice liquid proportion is 1 is to 1. My mother soaks the rice overnight, drains the rice in a sieve before cooking for an hour. It can be steamed. Saute the ingedients and add the rice. Once the liquid had evaporated and tutong starts to form at the bottom of the pan, take the pan off the fire. Transfer the mixture to a steamer lined with banana leaves. Steam for 2 hours for a well cooked Valenciana. Check the water level always and add water. If you have no steamer for the purpose, use a wire sieve lined with banana leaves. Find a pot that fits the sieve, then steam it. Be sure the sieve is suspended, so that no water will touch the rice or it will be tacky.
