How Nonna makes espresso ☕️ using a caffettiera (moka pot)

- 1. Add water to moka pot (up to the screw).
2. Add 2-3 tbsp ground coffee into filter.
3. Screw lid on tight.
4. Place on hob and wait until it starts to boil.
5. Pour first few drops of coffee into cup with 6 tsp sugar. (2x number of coffees) and mix into a cream.
6. Add 1 tsp in each cup.
7. Add coffee and stir.

In early times you'd add sugar because grinders and coffee was fucking shit, you don't need to anymore because it has gotten WAY better. If she likes her coffee like that she should enjoy it no problem, but in the espresso scene (yes it exists lmao) she does almost everything wrong in this video.

For anyone making this-don’t do tbsp, that stands for tablespoon. She used a teaspoon in the video, which is tsp.
When she started to make the 'crema' she added too much of the initial coffee brew to the teaspoon of sugar. Her grandson (apparently) added more sugar and continued. This flavored sweetener seems to have been borrowed and used in Cuban coffee (or they figured it out separately), but they call it 'espumita' or 'azuquita'. See "Have you tried a Café Cubano?" or "How to make Authentic Cuban Coffee Recipe Espresso" for details on making 'espumita'. In "Making Cuban Coffee in Miami" they add a pinch of salt and calls it 'Azuquita'.

Yes! And do you make two separate brews of coffee 1 for the froth and 1 to pour - or - do you just use the first bit that ‘percolated’ from a single brew. We need to know.
@@Raiirow Basically add 2tsp of sugar per cup of coffee that your moka pot makes, add a splash of the first bit of espresso that comes up, stir until a cream forms. You use the first runnings to make the creamina!

Essentially the same thing. It was invented in Italy with the bialetti moka pot but it is popular in Cuba too.
Nonna, this is the only way we nake coffee in our house. Americans dont understand this type of coffee. Instead of serving it for 3 people, i serve all of for 1. 1 meaning just me.

Pro tip is using a whisk in a bowl or if u have it just use a mixer and it will froth up in less than 20 secs

Yes, it is. I suggest using fine sugar, not too coarse.

I thought Cubans first did this style of sweetener as it looks like she's making a 'Café Cubano' with espumita. (Who knows?) See "Have you tried a Café Cubano?" or "How to make Authentic Cuban Coffee Recipe Espresso" for details on making 'espumita'. In "Making Cuban Coffee in Miami" they add a pinch of salt and calls it 'Azuquita'. (Also see "Azuquita - The Foaming Miracle of Cuban Coffee") Both cremina and espumita seem identical in preparation and both coffees are going to be strong and sweet. If you like that also look at "How To Pour The Perfect Vietnamese Coffee" for a different style of strong and sweet coffee, though he likes it extra strong. Enough to make him sing!

The sugar cream made with coffee is unfortunately an irrelevant operation in the process. I mean, it's more part of her own "coffee ceremony" than something really useful for the preparation itself.
It's a cream made of sugar hydrated with coffee, that goes... into the same above mentioned coffee. Extra operation for zero result.

Be careful !! Moka pots explode everyday!!! You will get seriously burned or die.
You need alk the gaskets on the moka pot, and do not overfill the pots and the first bubble you hear when the pot is on the fire, turn off the fire (stove) or your mola pot will explode!!
