char's S type was actually a unique unit in it has the highest acceleration of any one-year war mobile suit mainly cause he had the limiters all removed from the suit.
Zeon tech is modeled after WW2 German design which was notorious for it's Crippling over specialization. it's a deliberate story element. in universe it also makes it harder for captured units to be deployed against them. after all if you have no parts it's worth fielding.
The MS-06 Zaku ll was my most favorite mobile suit when i was getting into Gundam! Nowadays my favorite Zeon mobile suit is the Efreet, more especifically the MS-08TX/N Efreet Nacth.
I always liked the MS-06G high-mobility ground type Zaku, but it seems to be always overlooked. My favorite MS is a tie between the MS-07A Gouf prototype and almost all the Gelgoog types (specifically the MS-14jg Jager).

I honestly like the B-type Zaku 2 kai. I think that looks more intimidating and fits better with the unionized maintenance plan as it looks a whole lot easier to replace.
In Gundam Breaker 3, I upgraded my Zaku II into a Hizack. And evolved my Gouf Custom into a Gouf Ignited. Good MS in that game. The different parts you can combine is kick ass. It allowed me to recreate MS that arnt in the game and make my own custom MS such as my Ultra Gundam.

Bearing in mind, mainline Armed Forces tended to stick with more traditional Mobile Armours, Mobile Suits were developed by the militaristic wing of Naval Intelligence, while several Generations of Gundam-Class Mobile Suits were developed in secret on, what was generally believed by the masses, an Earth rendered unhibatible by nuclear war, instead living either in giant space colonies or in domed cities on Mars!
You missed the MS-06S type which was used by char at the battle of Lum and most of the OYW , however char's was a step up from this big step up as his had no limiters installed. char earned his name in his zaku II S and this was also likely it was the first HM zaku produced. given its Maximum Acceleration was 0.69G it was slightly faster then the MS-06r-1A which had a Maximum Acceleration of 0.68G
I will have to say my favorite zaku would have to be the Zaku 2-FZ type. Mainly because of the better performance it had, the weapon arranged meant, and the overall look of the unit. But one thing I am curious about is why didn't some zaku 2 pilots customize their machine to have 2 shields instead of one?
