I just realized that naranja agria (sour orange) is the same thing as a Seville orange! That makes so much historical sense. I was thinking it was too hard to find fresh in the local Mexican stores for Yucatecan marinades, but a British expat friend has a tree she uses to make marmalade. Sorted. Now to find some Xcatic pepper seeds to grow this year!
