Simple KIMCHI Recipe

  • Ingredients:
    SIMPLE KIMCHI RECIPE
    Chinese cabbage: ~500g
    Flake Salt: 1.5tbsp for soaking cabbage
    5-6 Spring onions: 40g
    Carrot: 60g (1 small carrot)
    Kimchi Paste:
    1⁄2 Pear/apple: 100g
    1⁄4 Onion: 35g
    Garlic : 30g (1 small bulb)
    Ginger: 5g
    Fish sauce: 2tbsp
    Sugar: 2/3 tbsp, (or honey 1/2tbsp)
    Korean chili powder: 1-2tbsp (Add more if you like)

    What does "When it is ready" mean? I have never had kimchi.

      Thank you @deeperanddown. It takes 2 days in the UK to be ready to eat. If it’s warmer where you are it will take less time, and it will get more sour the longer you leave it to ferment. I would suggest you keep tasting it once or twice a day until it’s the right sourness for you. Hope this helps!

      @@yentindall Thanks. I'm in the UK too. I might need to buy some to have a reference and see if I like it. I just have heard a lot about as it seems to be an addiction to many people in South Korea.

      Sour, a bit soft compared to fresh cabbage, and bubbly brine to your taste.
