Please explain why Flowers , Dragons and jokers are good tiles to hold

I am also interested why flowers and dragons are good to hold. I just started and am having hard time deciding what to hold and what to let go. What hand would you suggest to start playing for beginners. I am struggling with choosing hand. Natalie I love your videos and hope you have more tutorials.
