    Great information! Thanks! Q: on the second and third ferment, my kefir water is clear. There's no more orangish dark color. Why is this? Are they fermenting still? It doesn't have a taste either. Why?

    What is the maximum time for which water kifer. can be kept and if it is to be kept for one year then what needs to be done for it?
    Note : My question is for Water kifer and not for kifer grains .

    Is it possible to make sugar free kefir water? I suspect that the sugar free water kefir that i bought from a shop is just flavoured carbonated water 😱

    The little bags where are you buying those, you also mentioned you can leave the grains in the bag if that is the case do you just drop them into fresh sugar water and keep in the fridge. Thanks

      Seems ridiculous to say, but there's not as many "billions" of bacteria in water kefir! (?).

    I tried my first water kefir two days ago... on the surface there is now a thick white film and bubbles... did something went wrong?

      Yes. The 2nd fermentation (if you use fruit) can be up to 7 days long - to get rid of most sugar. 3 - 5 says is best as it's still kind of sweet.

    I'm not supposed to drink carbonated sodas and I don't. what would you suggest ?

      On the second ferment instead of sealing the bottle with a solid lid cover it with a lid that breaths like you did with the first ferment. This will release the carbonation from the liquid and you will have a flat flavored kefir water.

    I have freeze dried fruit. Can I crush it to a powder and use that instead of the dehydrated fruits?

      Raffaello I use 10-15 Organic Raisins, Sliced Ginger pieces and Lemon wedge that I squeeze alittle... But, I transfer my 1st ferment to Another wide mouth 1/2 gal Jar, (minus the grains) this is my 2nd ferment, add the fruit, let stand 2-3 days. AFTER That, I Then strain the fruit (and eat) and Then I bottle my liquid in those Swing top bottles. (I've even reused some "plastic soda pop bottles" if I want to take them away from home for the day.)
      I usually leave the (3rd ferment) on the counter Again for a few days, but burp the glass bottles 1-2 times /day.
      I get my bottles @ fermentaholics.com .

    The only recipe that has worked for me is ginger and lemon - *slightly* carbonated, and still pretty tasteless. I've tried strawberries, but it either stinks, or remains the same colour, and is *still* tasteless and flat as hell. I don't know what I'm doing incorrectly.

      I added some sugar in my strawberries n then do the 2nd ferment. Removing the green tips... it came out nice. Make sure ur berries r clean.
