    Thanks again! During the fermenting process a slice of biological lemon even will improve the taste and the health of the waterkefir. Waterkefir grains enjoy a 'sour' environment to grow and live in.

    Just saw this one for some reason, Mary! Wonderful as always! I have been making water kefir for a long time, and have even attempted it with Sucanat and it did NOT work! So, definitely use organic white sugar! I *never* worry about taking the water temp, so most people can probably not over-stress about that one too much! ;) I use the wonderful Big Berkey for my filtered water! Never been happier with healthy water that tastes SO wonderful compared to even just a Brita! The Big Berkey also filters out arsenic in the public water - a REAL bonus, I'd say! ;) I have never used dried water kefir grains, I always use fresh. I get mine from Mr. and Mrs. Kefir - they are wonderful! My favorite way to make my water kefir is to put the strained off sugar water (that of course doesn't have sugar in it b/c the kefir grains would have eaten it all up!) into a carbonated style bottle (I use recycled Trader Joe's Ginger Beer bottles!) and top it off with at LEAST a 1/2 cup of pink lemonade! That has been my favorite flavor thus far -- and I've tried A LOT of different flavors! LASTLY, if you ever have any stray fresh kefir grains, put one or two in the soil of any houseplants or even your flower or veg garden! The plants will be SUPER happy and healthy if you do so! ;) xoxo

If you ever decide to make a homemade probiotic, the good news is that it is a lot less expensive than what you buy in pill form plus...one teaspoon of the liquid is considerably higher in beneficial probiotics than most pills.       I think fermenting vegetables or drinks like kombucha is like having another houseplant or pet! I have a lot of appreciation for these living things that give us so much! It’s fun to have something fizzing away on the shelf, and in the fridge later!

    I like to add a slice of ginger and one sliced up green apple with the sweetened water. We like to eat the apple slices after 24 hours. The grains also activate much faster.

      @@rebeccafreeman1123 I don’t do a second ferment unless it is with water kefir that has been dried and needs reactivated. I add water and molasses to the dried grains to help reactivate.

    I use raw sugar and well water works great. Also some friends of our used a jug of water like you did and it killed their grains, it was tested to have chemicals in it

    Several years ago I would make water kefir alot. I had a tick bite and within 3 days had developed a bullseye mark. So the doc gave me some antibiotics and I had no problems after that. But I believe that because I kept up with the probiotic that it helped my body reject anything bad.
    I quit because I believe I was just turning sucrose into fructose and (having quit all sugar) I needed to stop the water kefir. I'll try it again cause I got rid of my pre-diabetes but I will monitor my blood sugars.

    Thank you so much because that’s what I wanted to know was how to add the fruit so you just add the fruit after You strain it and you put the fruit in and you leave it in for 24 to 48 hours that’s wonderful I need to try that with ginger and with fruit thank you I know you do the ginger bug but do you use kefir kernels for that too

    Should you avoid metal spoons? Metal at all?
    Do you prefer kefir or kombucha for ease of taking care of, taste, health benefits? Thank you for all this good information. It's very helpful.

      Great questions. There are two schools of thought about metal. Some say avoid it, other say it doesn’t matter. I don’t know whose right but I have never had any trouble using stainless steel spoons or strainer. I definitely prefer Kefir. And specifically dairy Kefir. It agrees with me the best. I also find the maintenance of Kefir much easier than dealing with the every growing...and growing...and growing...kombucha SCOBIES!! As to nutrition, I would suspect they both are good and bring different probiotics to one’s diet. Love, Mary ❤️🤗❤️

    in france, we use to put a dehydrated fig or abricots and 2 slices of lemon into the first fermentation and then take all out and do the second fermentation ( and adding fruits or juices ....... )

    Thank you Mary.. Cultures for health is a very great learning site. I have been make Kefir for a very long time now... when we were somewhere, I took a sip of soda.. and it was awful. tasted so chemically. And that will most probably be my last sip.. It is hard to beat healthy drinking.. Nicely done video. Thank you.

    I’m glad Ozarka water is ok. We had bottled Ozarka and it had chlorine taste. I noticed it because we’re on well water. It probably wasn’t spring water.

    Excellent demonstration. Is it usually made in such a small batch? It seems like alot to go though for that little bottle. When I brew kombucha I get over a gallon from each batch.

      Hi Jessica, Great question! Yes, you can make a larger batch. You will want to use a larger jar, more liquid, and a few more grains. Although sometimes, depending on the strength of your grains, a tablespoon or two may actually be more than sufficient. Love, Mary

      Mary's Nest this is awesome! I watch all your videos and some of these things I have made/am making now. Sauerkraut, fermented Dilled beans, water kefir, milk kefir (from your video), cultured butter (from your video) 😘 you do a great job on your videos and I like your kitchen. Mine is French country and I have blue/white/black with black roosters. I have chickens and fresh eggs. Also everything I plant in my yard is edible/medicinal/etc. when the SHTF I’m not going hungry! These videos you make are so useful for getting back to the way things were done and should be done! Thank you!! You’re my fav!!!

    Hello Mary, thanks for you clear explanations. Some people recommended to rinse the kefir grains, and some people added salt in. According to your experience, do you think it's better to go through these process? Thanks in advance!

      No, I would not recommend rinsing the grains. You will wash away beneficial bacteria and yeasts. And no, I would never add salt. Salt is not necessary for this type of fermentation and may only serve to hurt the grains. Love, Mary ❤️🤗❤️

    Hello Mary,
    Great video like usual! Well done!
    I got some grains from my brother and they multiplied like crazy! They seem to be doing just fine, however, today after leaving them to ferment a little too long I guess, and since the quantity augmented, I got a rotten egg smell from the 1st ferment. The grains seem to be fine and don't smell, but I had to throw out the water because the smell was unpleasant, as well as the taste. I've made another batch with the same grains and am waiting to see how it will turn out. Any advice would be greatly appreciated! Thanks!
    Oh and I live in Africa, so I think I should reduce the fermentation time as it can get really hot here!

      Hi Georges, thanks for visiting and sharing your experience with me. I understand completely. Yes, I think the warm weather caused the problem. I think your grains should be fine. After something like that happens, it’s best to rinse your grains well with some sort of filtered water and then try another batch. It should be fine. But I would suspect that it probably won’t take any more than eight hours, or so, to culture if it is very warm where you are. Keep me posted on how the how old this turns out.     Can you transition water kifir grains to milk kifir grains ?

      Hi Nancy, that’s a great question. I don’t think so but I’m not 100% sure. I know you can transition milk Kefir grains to make a water Kefir but research says that you can’t transition them back. Now, grains specifically made for making water kefir are different than the grains specifically made for making milk Kefir. So I’m not sure they can ever make milk Kefir. But I must confess, everything I’ve read about all of this I find quite baffling. Because in my mind I’m thinking… Well wouldn’t the grains culture milk or water in some fashion. Maybe they’re not making it specifically with the same bacteria… Good bacteria… But you think it would culture whatever liquid it is in. This is not something I have done and I would need to experiment. I might set aside some water Kefir grains and some milk Kefir grains and see if I can switch them back-and-forth and see what happens. Maybe you can try the same. Keep me posted. Love, Mary❤️🤗❤️

    I am assuming I can use distilled water for this. I use distilled water for my fermented vinegars and Kvass. I guess I will find out. By the way I really appreciate how well you explain things and go through the steps. I’ve made milk kefir before but have only just learned there was such a thing as water kefir. Just ordered some water kefir grains to give this a go.

    I never use water with Flouride. Flouride has been proven to be a poison. Yes, it costs to buy good water, unless you have a home filer system that takes out fluoride along with other dangerous chemicals. I love Cultures for Health. I make Kefir and Buttermilk along with my own sauerkraut, so far and really love them!

    Canadians may wish to order water or milk kefir grains, or Kombucha or Jun SCOBY’s as well as a variety of sourdough starters, from www.culturemother.ca in Saskatchewan. I have ordered from them and been thoroughly satisfied. Shipping live cultures from outside the country is difficult, especially at this time.

    Hi thanks for you very helpful instructions. My question is how is the kefir grain started? Rather than buying the grains can’t we make some from scratch? I can’t see any instructions anywhere that gives a recipe.

      You can’t find a recipe to make them because they’re not some thing that you can make easily. The grains are a symbiotic culture of bacteria and yeasts that originated in the Caucasus Mountains. They have now been shared all over the world. So you need to either purchase them from people who sell them or find someone who’s making kefir and will share some extra grains with you. Love, Mary❤️🤗❤️

    I cannot use stainless steel pots or pans, have suffered from heavy metal poisoning. I heat in glass pans. Is that okay?

    I started making yogurt in the 70’s and milk kefir in the late 90’s, but have been vegan for about five years now. This is such an excellent primer. I plan to be making water kefir soon thanks to you. Your videos are like an oasis in this needlessly coarse society we’ve created for ourselves. I think I’ll stay for a while. Peace- Peter

    1. The 1st straining, must it be tossed or can it be used to drink?
    2. For 2nd batch, I repeated exactly the way I made 1st batch and didnt use 1 TB sugar/1 cup water, is this ok?
    3. How long can the same grains be used over and over?
    4. Both the 1st batch and 2nd batch I fermented for 6 days. Is there a specific time limit as the 48 hrs or can it go longer.

    Hello Miss Mary. I make this on a regular basis and I do a second ferment in flip top bottles but it comes out flat every single time. Do you have any suggestions on how I can get better carbonation? Also, can I do my second ferment in a quart size jar with the screw top lids? Im not a fan of flip top bottles. Thank you so much for your time.

      Hi Kristen, I agree with you. I’m not a fan of the fliptop bottles either. But they are the best way to increase carbonation. With jars and screwtop lids more carbonation can sneak out so they’re not as good at keeping beverages carbonated. However, that said it’s interesting that you are not able to maintain the carbonation with the fliptop bottles. I’m not sure why your Kefir isn’t becoming more carbonated. How many days are you allowing it to ferment? Everyone’s kitchen is different, and I’m wondering if your Kefir needs a bit more time to ferment and become more carbonated. Try fermenting it a little bit longer and see if it makes any difference. Keep me posted. Love, Mary❤️🤗❤️

    Excellent tutorial on how to make water kefir. Question: If you wanted to flavor the water kefir, could you add some grape or apple juice concentrate, and if so, how much? Also, will the bacteria in the water kefir eat the sugar in the grape or apple juice concentrate? My doctor has me on a low carb diet, and I'm wondering if adding the juice to flavor the kefir would add to the carbs?

      If you give it enough time to ferment, the sugar goes way down, but you may need to burp it occasionally. I put freeze dried strawberries in mine, and left it too long. When I opened it, it exploded all over the ceiling, red spots, and everything in a 12’ diameter. No fun.

      Hi Harry, Great question. I suspect it will be OK. Some folks say that ferments of any kind like the minerals in regular water but I'm not 100% sure. I would experiment. Keep me posted. Love, Mary
