Loved the video. Helped me get started with kefir. Btw I read up on figs and raisins and why they work so well with kefir. The reason is they contain sulphur which kefir needs and loves. Apparently it also wants calcium. So if your water is too "soft" add a tiny bit of calcium carbonate. Hope this helps. Thanks again for all the tips in the video!

I have watched many videos on water kefir; this is one of the best ones. Thank you for being so thorough. For those placing the kefir in the pressure tight bottles, don't forget to burp them regularly, or else you have an explosion of kefir all over your kitchen...that happened to me.

My neighbour gave me some grains last week, and I've just made my first batch. Absolutely fascinating. I put a spot of bicarbonate of soda and a piece of eggshell along with the sugar in. They seem to be enjoying it. Just strained off and added some fruit juice and now secondary fermenting. Great video, just subscribed.

Very informative... i had been given starter grains and mine turned SUPER ACTIVE just like a lava lamp bobbing up n down because i added a few pink salt grains and a 1/2 tsp ish of Molasses... was amazing activity !! Plus they grew HUGE and muliplied like crazy. I also kept it ontop of the fridge, a tad warmer, The whole process was truely amazing. Adding molasses made mine taste EXACTLY LIKE BEER. LolHowever. I never knew i could do a 2nd ferment. Whick makes perfect sence as ive Made amounts of Kombutcha w 2nd ferments and was MAD FUN 💝😍. Great Show. Thank You. 👍✌️👏 🦋🌸🦋
trying to revive mine after a long period in the fridge... I found controversial answers about molasses! some swear by it, others warn you not to use it.. I divided the grains in different groups, one with molasses and sugar, another with just baking soda and sugar, and another one with just sugar and a bit of lemon juice. So far, the only one semi bubbling is the one with just sugar and lemon... Maybe I need to wait more days but I just don't know which formula is better :/
@@ValCronin Sorry for the late comment but I'm just seeing this vid now. Using unrefined sugar works best, like pure cane sugar. Also, adding molasses works amazingly. I hate the taste of molasses but when the kefir grains get done with it, it's barely noticeable. In fact, it makes the flavor even better. If you have to use filtered water, or reverse osmosis water, then you need to add calcium and minerals like @ImmaLiving Again does, otherwise the kefir won't grow nicely.
I just found your channel and I'm thoroughly enjoying it! I'm all set up to ferment veggies with an anaerobic system, and I've been making milk kefir for the past few weeks. I don't care for the plant milk kefir that I've been making and the dairy kefir I'm making is causing a histamine reaction or something in my throat, so I really want to try water kefir! I think my kids would also enjoy having "soda" at home! Keep up the good work!
I actually use milk kefir grains and it works very well. If you have milk kefir grains just put sugar water (I only use rapadura which I think is equivalent of what is called in the video raw sugar cane sugar) 50 grams per litre of water. I also use the kefir water to make beer.

Manju Bhashini Thank-you. Enjoy the water every couple of days. Throw the grains away or share with friends when there's too many. Humans can't digest the grains because they're just made of cellulose. Eat them if you want but there's better things!
I bought live water kefir grains from Florida Sun on amazon. Best investment I have made because there was nothing to reconstitute and the grains grew exponentially every time I make kefir.
I had a batch of grains which I had converted from milk kefir to water kefir. But instead of giving them water and sugar, I used to give them apple juice. One day of normal fermentation then one day of fermentation inside an airtight container and I end up with a delicious beverage of cider - slightly alcoholic and very bubbly. I kept it going for a whole summer and then let it go as it was becoming more yeasty in taste. I love to experiment.

Ι've left my grains in the fridge for...years!!! And they are still working fine, but occasionally we have been changing the water with fresh sugar water, not very often though, some times could be left for a year, i believe it's easier to revive them from the fridge than from dried or frozen ones.

Well I just had a bottle blow up! I did have a pillow case encasing it so the glass was contained.... Learned a lesson. It was the powder kefir, I had used it already, no problem. This time I think that I filled way too much with pomegranate juice, should have had more water...I think. I am still waiting for the water kefir grains to rehydrate, done it 3 times. Bottle was made in Spain, looked good...guess not? It had been going since Saturday night, was going to burp it tonight, the 11th. I am in Portugal...can’t find sometimes what I want. Good thing that you warned about explosions....😂❤️

Got No jams !! I'm using stainless steel. Only reactive metals are troublesome. Silver and copper don't behave will in the presence of acid and bacteria.

I do have a question when I am making other fermented vegetables, and it calls for the jar to be topped off with water can I use my water kefir? Thanks! I learnt something new from this video - adding baking soda. I've had my kefir grains for over a year. Started from some donated frozen grains. Since then, they have not grown and have become very mealy. Still alive but barely. I have tried resting them, changing the types of sugar, length of fermentation, even the environment (moved them from Kuala Lumpur to the Caucasus, supposedly home of the kefir). Maybe they don't like me! But I still love them. Would appreciate some troubleshooting. Thanks!

Use water kefir grains and coconut water/milk that you find in the fresh section! I do this in the UK and use koko, sainsburys or morisons fresh coconut milk in a carton (1 litre). I leave it for at least 4 days (it's cold in the UK and my specific cupboard) and stir it once a day with. Silicone spoon. Seems to work! Just water kefir and coconut milk/water. The kefir eat the sugar.
I tried with it and the taste was really terrible, I felt it looked like alcohol. Maybe because it's too hot in Vietnam so the progress was very fast, just about 5 hours.

When I store my kefir grains, I put in sucanant and a squirt of unflavored electrolyte solution. This goes in the fridge and they grow like crazy, even in the fridge. I find that the molasses give an off taste that I don’t care for, even after rinsing well. The sucanant and electrolytes give them stuff that seems to make them happy.

Question: if the grains don’t like acidic environment, 11:00 wouldn’t make better sense to add the lemon to the second format instead of with the grains
After the second fermentation after 24 hours i strain the fruits and then put it up on bottle and let it sit for 24-72 hours in room temprature. After that i put it in fridge so it Will be cold. Then your kefir is ready to enjoy
Well I just got my Kefir grains in the mail to begin the process on my own. Are you still doing this, I'm looking forward to home made healthy soda like drinks. Do you have any other recipes to share, how well do the fruit flavors come through? Can you use whole pieces of fruit (and still end up with some decent fruit flavor after the second ferment)?
Thank you . I've just bought a small jar (1/4 pint) of organic water grains in a health store. Its cloudy looking but not many grains that I can make out in it. How would I start if off?
Vanden Bosch simple, take your kefir water when it’s at its peak fermentation and cover the oats until water level reaches the top, also add about 1/2 tbsp of cane sugar. Mix well and add more kefir water if needed. I use a small mason jar and I cover with a lid (plastic wrap) and let sit for 2 -3 days. The fermentation time will very on the temperature in your house. Try that and experiment a little, you should be able to find the proper balance easily.
After receiving the dry water kefir grains, how many times/days would you recommend to 'hydrate/straing' them before actually getting the full probiotic potency? 5 days?

Good day! ☀️ thanks for this video My water kefir lately is viscous like gooey, and it ferments very slowly, it is 48 hours and it tastes very sweet, that happened the first time when I put baking soda to follow a recipe from someone and since that time it has been three batches like that, there is something I can do? At sight they look healthy and they bubble not sour Note: I add Lemon and raisins, I am making a large batch of 8 liters
The longer you let it ferment the less sugar but too long and you'll loose your carbonation. 3 days should be long enough for it to consume most of the sugar and certainly 4 days will. Just make sure to release the pressure daily.

Did you add sugar too with the salt and molasses?

Try adding pink salt
Or even better add a few drops of liquid trace minerals.

Question: I just bought a kefir starter. It is in a form of powder. Can I culture it into grain with water and sugar ?
PaperBag Bag no. It will always be just a culture. You can culture your next batch with 20% of the last batch, but you'll never get grains.

After the second fermentation after 24 hours i strain the fruits and then put it up on bottle and let it sit for 24-72 hours in room temprature. After that i put it in fridge so it Will be cold. Then your kefir is ready to enjoy
Well I just got my Kefir grains in the mail to begin the process on my own. Are you still doing this, I'm looking forward to home made healthy soda like drinks. Do you have any other recipes to share, how well do the fruit flavors come through? Can you use whole pieces of fruit (and still end up with some decent fruit flavor after the second ferment)?

Vanden Bosch yes no problem
Vanden Bosch simple, take your kefir water when it’s at its peak fermentation and cover the oats until water level reaches the top, also add about 1/2 tbsp of cane sugar. Mix well and add more kefir water if needed. I use a small mason jar and I cover with a lid (plastic wrap) and let sit for 2 -3 days. The fermentation time will very on the temperature in your house. Try that and experiment a little, you should be able to find the proper balance easily.
Vanden Bosch it will end up like a yogurt in a few days. You can taste as you go, just keep it clean from unwanted bacteria.

Thanks great info....I have been making Kefir for quite a while and to start with the grains were growing well. but lately they don't seem so healthy and are not growing but the water is fermenting well but takes longer to do it. I think I need to nourish the grains more??? What do you think??

My water kefir lately is viscous like gooey, and it ferments very slowly, it is 48 hours and it tastes very sweet, that happened the first time when I put baking soda to follow a recipe from someone and since that time it has been three batches like that, there is something I can do?

does the second ferment still leave a low sugar beverage?
The longer you let it ferment the less sugar but too long and you'll loose your carbonation. 3 days should be long enough for it to consume most of the sugar and certainly 4 days will. Just make sure to release the pressure daily.
