This is my favorite for the summer--use those wonderful zucchini while they are small. I do sprinkle some Italian seasonings or basil into the sauce step b/c I like it. Thanks for the suggestion of other meats/veg proteins--I will try them.

I love this recipe! It's a C&D classic. I like to make a pizza version of this recipe with pizza sauce, tomato paste, mushrooms, banana peppers, bell peppers, oregano - anything you'd like on your pizza - and then top it with cheese. So good 😊.
I usually use a rubber spatula and chop up my turkey which is so tiring 😂 Do you purchase your ground turkey at the butcher? It looks so clean(if you know what I mean)

Dani- wonderful zucchini boats! Please feature more ground turkey recipes.I am on a post-surgical diet and can have white ground turkey breast, white chicken, fish, seafood and tofu. Will look through your on-line recipes. I like that you are light with the olive oil. I will substitute the green pepper for roasted red peppers and I'm good to go! Your cookbook is on its way to our farm. Can't wait to incorporate our garden bounty with your reipes! ~ Diane
I use fresh cherry tomatoes instead of sauce and i salt my zucchini stuffing to pull out as much moisture as possible and season at the same time. Then during cooking I use that same meat chopper to mash up the tomatoes and zucchini; works great!

If you saute the zucchini first, any remaining liquid will evaporate, so it won't water down the eggs! XO
