    A lot of people are grossed out by the idea of raw or rare steak, and many folks believe that it's unsafe to eat. Here, I explain the science behind eating rare beef and other red meat. We also take a look at chicken, and if you should be eating that rare, too!

    My whole life I grew up on well-done steaks. I honestly did not even know that you can eat it undercooked. Until one day I got a job at Outback Steakhouse in my town. I had to go through some classes on how to understand steak before getting the job so I can be knowledgeable in explaining it to customers if they asked. After my training, I was offered their famous sirloin and they asked me how I wanted to cooked. I honestly didn’t know how to answer the question as I only had eaten well done my whole life. So they told me we will cook it in a way that we think you need to experience and I trusted them. They did like a medium to a medium-rare and from the first bite and on I never touched another well-done steak again. My preference whenever having any kind of beef is medium to medium-rare depending on the cut.

      Lmao same here, but it's good to try honestly. If you're used to well done, go to medium well, then medium, then medium rare, then rare lol I wasn't a fan of rare, but medium rare is as rare as I'll go

      @@m.hamzakhan4315 honestly a good rare steaks internal temp is 120-130, so it does render the fat enough to make them tender, the whole thing with rare is to keep the temp constant to render fat, while still cooking the inside long enough without losing its "color", rare is a brighter shade of red then blue rare, blue rare is basically raw still

      Technically "Cow" is not accurate. Cows are female cattle who have had 1 or more calf. Typically cows are used for dairy. Steers are typically what most of your steaks are. So saying beef is correct, as you really don't know rather what's in front of you is cow or steer.

    Since I was a young boy I’ve always been against going over medium rare cause you lose the flavor and it toughens once it hits medium. I’m the only rare - medium rare person in a family of well done lovers. I’ve gotten my folks to try and enjoy medium rare but my sister won’t budge. She tries to force me to stop liking medium rare and conform to liking well done.

      A quick search in google will reveal that more than 80% of beef in US is infected with parasites. Their eggs reside in muscle aka meat. It is unsafe to eat rare beef. Your sister is completely right. This lady in the video completely skips on this issue. Besides bacteria, there parasites in both beef and pork. Only correct temperature will kill those.

    I'm 23 and never had any other type of steak besides well done.. Apparently my family thinks eating anything besides well done will give you parasites, food poisoning, etc.. I'm thinking about going to a steakhouse somewhere here in Socal to try it out cause I'm tired of eating steaks that taste like fisherman boots

    Joke on you. In poland we have dish called Tatar. Basically it is raw ground beef and raw egg with topings. You can eat raw beef, especially if it comes from a reliable source.

      Even in the overregulated Germany you can eat Tatar, Schweinemett ("Mett" is raw grounded meat with salt, pepper, and few other spices, sometimes already or if not served with raw chopped onions, Schwein=pork), Carpaccio and you can get medium cooked grounded beef in some restaurants where they can assure they get fresh meat and store it under even higher standards, same accounts for the other raw meet dishes.

    I found this video because a restaurant just served me a very rare 16oz steak instead of medium rare as I had asked. I don't like to complain so I ate it and worried about it after the fact.
    It was very good but got cold fast. That was the only drawback.
    Honestly I was hoping to discover that there were nutritional benefits that came with less cooking.
    But at least I did get educated by an attractive educated woman. ;)
    Definitely coming back for more

    Jess I am curious you say ground meat is the same deal however, European countries such as France will ask you to specify how you want your ground beef burger, if not specified they will assume you want it rare and... what about steak tar tar? I had the hamburger de cheval medium rare in Paris and never had an issue.

    There's also a reason chicken (and sometimes steak just because it's kind of boring unless it's Wagyu at that point) don't even appear on the menus at Michelin star restaurants - because with good provenance and sanitation, other meats do not have the same bacterial risks, therefore squab and duck can be served somewhat rare, whereas with chicken, a restaurant only serves rare chicken once.

    Side note: It has also been found that cooking meat for an extended period but at a lower temperature than the "safe" temp will do the same job of killing the bacteria. For example, you can cook chicken to an internal temperature of only 145 degrees, provided you hold it at that temperature for a long period, I believe it's 2 hours. I sous vide my chicken breasts at 152 for 2 hours because I didn't like the spongy texture of 145 degree chicken.

    I had food poisoning once and it was such a horrible experience that it literally scarred me for life. That was 2 years ago and to this day I wont eat meat unless its cooked so much that its almost burnt lol.

    Good presentation. When packing houses jacarrd ( brand name) a steak, it’s under the most sanitary conditions, so even though there are always some bacteria present, it’s minimal as long as the meat maintains a proper temperature before you buy it. If you needle your steak at home, it’s ok as well as long as you eat your steak asap after tenderizing and cooking. And buy your meat from a reputable supplier! 😊

      Nor have and I don't know anyone who has had a problem. Our kids were eating rare beef as soon as they had teeth. They also ate and adored raw (unpasteurised) milk cheeses, including blues, raw fish - sushi etc. Neither ever became even slightly unwell as a result.

    how about Taenia Saginata parasite, or cow tapeworm that is transmitted from cows to humans. Their "eggs" are in muscles and become adults in humans. They can be killed at prolonged treatment in the freezer (6-10 days -10C) or cooking it thoroughly to at least 160F. I choose safety in comparison to meat tenderness.

    So bacteria can’t or won’t go into the meat on it’s own eventually at some time if the meat is left out at room temperature for a long time, I thought when meat went bad it was because of bacteria and germs, exposure to air, which is why we store it in a container that seals properly and in the fridge, or cook it and keep it hot, if food isn’t reheated to proper temperature, can’t it make you sick, I thought it had to be kept hot to kill bacteria or cold to freeze it, but if there’s no bacteria inside the meat then is it ok to leave it out or reheat it just a little bit to warm it up

      It's only safe if it's from a supplier that complies to really good standards and is prepared in a really hygienic way. Be careful and make sure you get it from a reputable place.

      @fusion210 no, not at all... just the need to call out being careful and sourcing from a reputable place is very US centric.. the rest of the western world doesn't really need to have that called out as the standards are better enforced everywhere.

      Western Europeans are awfully cocky about their food quality. The data does not support their cockiness. The US and Canada have the safest food in the world by quite a bit
