I've been trying to find an simple easy recipe for Mexican Rice yours is the one I will be using. I'm and older single man and I cook for myself. There are plenty of videos on TH-cam and so far your video is a one pan deal. No roasting peppers and tomatoes then blending. Just one pan.
I brown 1 cup long grain white rice in corn oil in a Dutch oven. Add 2 cups of fluid that consists of 1 cup red enchilada sauce and 1 cup water. Bring to rolling boil, put lid on, reduce to low for 20-22 minutes. Fluff when done and add some chopped green onion.
Most people add a clove of fresh garlic and saute it along with the onions. However if you want to make it even more simple try using both some garlic powder and onion powder. That way you don't have to saute anything other than the tomato sauce. You'll have to play around with the measurements for both depending on your taste, but probably use less garlic than onion powder. Maybe 1/2 a teaspoon of garlic powder and 1 teaspoon of onion powder. I would also make sure the oil is hot before you add the dry rice to brown it. Lastly, after you add the water, taste it for seasoning since this is the last chance you'll have to adjust the salt. Also, I would start with a 1/4 teaspoon of cumin because it can be overpowering. One teaspoon for one cup of rice is way too much cumin. If you have it, place a few sprigs of cilantro on top of the liquid just before you put the lid on. Carefully remove the cilantro sprigs before serving. Enjoy.
I never liked Spanish rice until my mother-in-law made it. She added a green bell pepper with the onion and I was hooked. She's been gone quite a few years but every time I make my rice I think of her.
That's sweet and sad at the same time.I also think of my mother when I make certain dishes that she used to make, and of my grandmothers when I make things they made. Its a beautiful thing the way families pass down recipes❤
I just made this for Super Bowl !! Used onion powder instead of fresh onion (husband doesn’t like). Going to serve this with home made pinto beans, fresh tortillas, salsa and avocado! Marcy you are the best ! Thank you for teaching me how to make this!
I am so proud of myself! This is how I do, except for the bouillion. If my husband sees me cooking rice, he doesn't want to see the tomato sauce. I use it, then hide can. And also the cumin. He swears he hates both, however when I make it, he tells me, "See this is better without the tomato or cumin. He justs wants salt and pepper. I say this today and I am going now to look up some more recipes. I hope they are Mexican.
Awesome, simple, clean and tasty. Perfect side dish. Add the refried beans, the entrée... enchiladas, shaved lettuce.....boom! Jesus may seem to even appear for a split second to give a thumbs up. God Bless you. Thanks Marcy!
We call it Spanish rice. I never add peas or carrots, but here in San Antonio some restaurants add them. Maybe it’s a Texas thang 😊 I make mine just like you, and I love lots of comino in mine!!
I love Mexican rice so much I think I could eat it every day! 😄 A long time ago a friend taught me how to make it two ways, one being very similar to yours. The other she called her cheat way, using a box of chicken flavored Rice-A-Roni, a can of Rotel tomatoes, a little cumin and 1 1/2 cups water. It's delicious!
My mom used to wash it first and I noticed it's easier to brown it without the starch. I also use real chicken broth if I have it. I love it with small cubes of corn, or peas and carrots. And yes. 15 min is important.
Do you use frozen veggies? At what point do you add them in (whether fresh or frozen)? I've rinsed rice for some recipes but rarely. Do you find it makes the rice less mushy?
I always chopped up colorful bell peppers and instead of tomato sauce I used diced tomatos and a teaspoon of chile powder...but we called Spanish rice..but the steps in the preparation was the same, great as left overs also...nice recipe always made that with having Mexican night...at least twice or three times a month....the kids loved it...
Mexican rice really good with fresh tomatoes also, either blended or chopped. By the way, some people call it Spanish rice but it's very different from actual Spanish rice.
This is another recipe that’s been requested. The question is…what do you call it? Spanish Rice or Mexican Rice? When I was growing up, we just called it “rice!” 😂
I’ve been trying to figure out how to make “Mexican” rice for ages. I’ve tried a number of different recipes but didn’t get what I wanted. This looks like just what I’ve been looking for. Can’t wait to try it! Thanks.
Your rice sounds delicious. I always love hearing how other people make things because then I can give it a try next time. I have used El Pato tomato sauce, too, and I do like it.
I’ve always loved Spanish rice I just put tomato sauce water a little salt garlic powder, onion powder of course and I also fry it like you do. It’s my family’s favorite! Thank you so much for sharing your recipe 🥰
The secret for no sticky rice is to let the tomato be absorbed into the rice allowing it to almost dry out before adding the water or chicken stock. The rice that tis most common in Mexico has green peas and small cubed carrots in it. And definitely no cumin. This is more of the way people cook it that have Mexican ancestry but have lived in the US for generations. Other than that, the instructions are right on.
Thank you, I love Mexican rice, refried beans with my enchiladas! My grandmother taught me to make enchiladas when I was a little girl but not the rice and beans !
Thank you! I’ve tried to recall my grandmother’s method - she used chicken stock she made from her chickens. But I always ended up with “mushy”. Now I know why! I needed the HOT water, and NO FLUFFING! GRATITUDE!!!💐 And I love the scriptures that change (I watched the refried also 😏 Blessings 🙏🏼📖🕊💐
I'm making this today with your Picadillo recipe! Thanks for having this channel...it makes it more bearable to live in North Carolina where it's hard to find this kind of Mexican food
I’ve heard that about NC which breaks my heart because my husband and I are looking to move there next year, it was almost a deal breaker for me because Mexican is my absolute favorite food! I’m with you, Marcy has made it possible to continue with plans on moving.
March I made Spanish rice to like you make it my family loved it you were right I use to make but your way was better thankyou God bless you and your husband❤😊
I did everything exactly as you said, except I added 1 tsp garlic powder and it was excellent. I've been looking for the perfect Mexican rice recipe. Thank you for sharing this.
I couldn't remember this recipe, thank you. My mom made this when I was a kid. She would add bell pepper, corn, chopped tomato, and get this she added hot dogs. One pot meal. Mom was a great cook. And so are you, again thank you.
Yummy , Looks delish !! & fairly simple , Thank You , i cooked some Enchiladas today , told the wife to bring home a can of Mexican Rice , didnt have any , wish i'd seen this earlier today, I will be trying this soon .
Thank you so very much. I have wanted to make this rice for so long. It just looked too difficult to make. I will make this for taco tuesday next week. Love your videos
This is fantastic I just made it last night. My brother's are very picky eaters and whenever I try something new they complain but they loved it.❤ this recipe is definite going into rotation
I really appreciate the vids you make. Most of my family has passed on. You're recipes taste just like what I grew up eating. It's a good way to reconnect with those memories and feel closer to my loved ones. Thank you so much.
Thanks so much for sharing your recipe.. I’ve never been able to make good flavored or authentic in my mind, rice. You made this so simple. Appreciate this so much!
Your recipe is so simple and we are able to make it fast. My family loves it. Our rice is very similar, however we add ground beef and diced red/green bell peppers, which takes a little longer.
When I was a teenager, I lived in San Marcos Texas I got a job working at a daycare center that was primarily Hispanic. The ladies there taught me how to make Mexican rice and this is exactly how they did it. It was wonderful and I've made it this way all of my adult years. I'm 55 now and it has never turned out wrong.
Thank you for showing me how to make it from scratch. I was buying Spanish rice in the packet that you microwave.....well I've mastered chili rellenos and now it'll be the rice. Please excuse the misspelling 😊 I will visit Albuquerque in Sept and I can't wait to eat the real thing 😂
You made a believer out of me! In the past Mexican rice for me "Consistently" turned out Wrong! Streamed white rice prepared basic in a sauce pan "perfect" I have the nack here, although it too being a learning curve. You cracked the Code here for me! This has been on "my bucket list" for years and thanks to you, I can do this! ❤ the "beagle" I have one he's more black with extra Ticking. 8 yrs. now and still energetic!
I make it like this too. I started using caldo de tomate instead of the tomato sauce because it works too and I don't have to store half a can of sauce. I spent years trying to imitate a local restaurant I frequent a lot. I think I'm there now (and I keep my eyes open), but I have to say that the ambiance of my restaurant brings a lot to the party.
Thank you for measurements, I've always eye balled myself and everyone has asked me for the recipe. Well shoot I dont measure anything. So this helps thank you!!!

I have been wanting for a long time to make "el arroz rojo". I made it tonight and OMG, it was a dream come true. (No cumin though). Delicious❤❤❤ Thank you.

Many techniques of cooking 😮❤

Sounds so good!
Sound's good. Hate 😭 sticky rice 😢. Unless it's for Chinese food 😅😅
I just made this for Super Bowl !! Used onion powder instead of fresh onion (husband doesn’t like). Going to serve this with home made pinto beans, fresh tortillas, salsa and avocado! Marcy you are the best ! Thank you for teaching me how to make this!
Mexican rice is my favorite! Love your faith verse on the wall!
Love this recipe.. Thank you.
I was so nervous making this rice, and it came out so good! My son loved it!❤️
I am so proud of myself! This is how I do, except for the bouillion. If my husband sees me cooking rice, he doesn't want to see the tomato sauce. I use it, then hide can. And also the cumin. That is hilarious! I could picture you just smiling and not saying a word.
Men can be so funny! 😂
Lol i do the same thing with my man. They think they don't like things but we know better 😂
Try the knorr caldo de tomatoe and totally cut out your tomatoe sauce & salt...
So so true about Husbands! Thanks for posting. We all got a good laugh!😁
Awesome, simple, clean and tasty. Perfect side dish. Add the refried beans, the entrée... enchiladas, shaved lettuce.....boom! Jesus may seem to even appear for a split second to give a thumbs up. God Bless you. Thanks Marcy!
That would be the endorsement of all endorsements! Thanks for the comment!
I love a good “cheat” version of any recipe, especially when in a pinch for time.
Oh that sounds yummy!
Don't forget the refried beans..
I’m all about the Rice A Roni “cheat” ! I use it for chicken and rice over using saffron rice.
The Rotel canned tomatoes are good, have used them, El Pato tomato sauce adds a tasty zip to the arroz.👍
Facts real Mexico women cleans the rice first before doing this recipe.
@@bunnyluver2176Washing the rice makes a huge difference. If using parboiled rice ('easy cook rice') it's not necessary.

Thank you so much.,Born in California eating in multiple languages no one has shown me how to make Mexican rice! Now I know-thank you again!!
This is another recipe that’s been requested. The question is…what do you call it? Spanish Rice or Mexican Rice? When I was growing up, we just called it “rice!” 😂
Marcy is it one cup of rice with a dry measure?
Your voice sounds like a news reporter's. Except you are telling the truth and not lying to us. 💕
I was thinkig the same thing while listening. I swear I've heard her somewhere else.
Amen
😅😅
Haha, now that you mention it she does sound like news lady!
U must be fun to be around 😐😐😐 not
I’ve been trying to figure out how to make “Mexican” rice for ages. I’ve tried a number of different recipes but didn’t get what I wanted. This looks like just what I’ve been looking for. Can’t wait to try it! Thanks.
I've never added cumin or chicken bouillon but I have added minced garlic, cilantro, green onions and I use El Pato tomato sauce for a little kick 🌶️
Your rice sounds delicious. I always love hearing how other people make things because then I can give it a try next time. I have used El Pato tomato sauce, too, and I do like it.
Or a dab or Rotel., for a kick depending if children are around or not. Some lil kids eat hot Chile..( I don't)
Cumin is not very commonly used when making rice in Mexico…
I’ve always loved Spanish rice I just put tomato sauce water a little salt garlic powder, onion powder of course and I also fry it like you do. It’s my family’s favorite! Thank you so much for sharing your recipe 🥰
This is the gold standard Mexican rice recipe! I’m just blown away that I was able to make this and it came out just delicious! Thank you Marcy!
Great video. I like to add bell peppers and corn to my rice. Next time I will add some cumin.
Thanks Marcy! I don’t make this because it never comes out right. Now I think it’s time to give it a try again, thanks for your inspiration 😊
I kid you not, I was the exact same way! For years. But once you get it, you realize there's nothing to it.
Same for me.
Thanks my dear for this quick n ez recipe for rice. I'm writing it down for future reference.

Your recipe is spot on in my opinion. Basic and then we can add from there. One thing I do sometimes is add a can of Ro-Tel. It's good.
Thanks so much! That's a great tip about the Ro-Tel.
Just Perfect, Sopt on. Because of my high blood pressure I try and watch my Salt. 🎶🎶🎶🤗
Thank you! I’ve tried to recall my grandmother’s method - she used chicken stock she made from her chickens. But I always ended up with “mushy”. Now I know why! I needed the HOT water, and NO FLUFFING!
GRATITUDE!!!💐
And I love the scriptures that change (I watched the refried also 😏

Love to see a new Bible verse on the board in every video. Great program.💫
You are absolutely right. 2 to 1 ratio is right.
I'm making this today with your Picadillo recipe! Thanks for having this channel...it makes it more bearable to live in North Carolina where it's hard to find this kind of Mexican food

Sounds like a whole different dish.
My mom called it Spanish rice and she made it perfect every time
Yes, called it Spanish rice
When I was a teenager, I lived in San Marcos Texas I got a job working at a daycare center that was primarily Hispanic. The ladies there taught me how to make Mexican rice and this is exactly how they did it. It was wonderful and I've made it this way all of my adult years.
