I just made this dish and I was sure it was going to be bland but it is absolutely delicious. My only complaint is that it makes a small amount. Can this recipe be doubled? Thank you for another terrific recipe! We're big fans and many of your recipes have become staples in our home.
I just made a double recipe and it's wonderful. I just needed to add 10-12 minutes extra cooking time after I added the besan mixture. I also added a heaping teaspoon of ginger garlic paste to the tarka this time just to change it up a bit, although it is just as delicious without the paste. I'm not a fan of palak because it can be bitter but the milk removes the bitterness and I like this dish as much as I do Sarson ka saag and it's less work!

Rajalakshmi Parthasarathy spinach loses a lot of its nutrients right after harvesting. That's why some companies which are selling frozen spinach have an icehouse (is it the proper word?) right on or close to the plantage. They basically freeze the spinach 2-3 hours after the harvest. Frozen spinach has up to 55% more vitamin C. So in that case... cook the **** out of the fresh one - there's not much in there anyway 😁
Mrs. Manjula is the best. Every attempt at Indian food failed miserably before I found her channel. If she publishes a recipe book I will buy it!
