I have guests coming over for dinner tonight and decided to make this for dessert. Now I know when you have people over is not the time to experiment with new recipes but Emma's recipes have never failed me. That's how much I believe in Emma's cakes lol. The cake is in the oven as I type this and the custard is chilling in the fridge.
It tastes amazing! But it definitely deflates a lot unlike other sponge cakes. I ended up cutting it in half, layering it and using the custard as a filling as well as a topping. It was still very delicious and was all gobbled up fast but it isn't as airy as I thought it would be.

Emma, I just made this and it was fab. I adjusted the creme patisserie recipe to incorporate the leftover egg yolks from the cake. I mixed 2.5 tbsp cornflour, 6 tbsp sugar, 1/2 tsp vanilla essence, 1 cup milk (adding 1 tbsp first to make a slurry, then adding the rest) and the two left over egg yolks and heated it till thickened, stirring continuously; it was perfect.
Made this today and it was delicious! The cake itself isn’t too sweet, but the custard really pairs well with it to give that extra bit of sweetness. I can’t get over how fluffy and moist this cake is :) I used 1% milk for the custard since that’s what I had and it worked great.
The custard on its own is heavenly as well omgg i did it “in advance” and i had to force stop myself from eating it and wait till im done with the cake

Bunch of sweet ripe bananas in the kitchen, strong resolve to eat healthy, and then this video. Darn. My cake turned out a tiny bit chewy because I only had high-gluten bread flour and didn't bother to adjust it. Still tasted great! Loved the subtle banana flavor. Loved the easy custard method too. This really reminds me of that Japanese dessert "Tokyo Banana"! It's like banana custard encased in a banana shaped sponge cake. It tastes amazing and I imagine yours does too Emma!

Thanks for the recipe. I actually used it to make crema de fruta. I ditched the banana and just added vanilla essence to the sponge then added fruit cocktail (drained) to the custard as topping. Everybody loved it!

Instead of making your own banana pulp for the bread, try using banana baby food. It comes out lighter in color, with a smoother texture and very yummy!

I made earlier and mine didn't turn out fluffy. It was super dense. The taste was good tho so i'll have to try again another time.

Let the cake cool down in the oven for 15-20 mins without opening the door, I've noticed that prevents sponge cakes from sagging immediately.

Can you put this cake in the freezer with the custard on top? I would like to make it but since I only tend to bake for myself I want to eat it sparingly as a treat or maybe I can put the cake in the freezer and keep the custard in the refrigerator? it looks yummy btw

I am going to try this as I HATE banana bread and generally things where he banana goes dark and a odd texture too, this looks great
Instead of making your own banana pulp for the bread, try using banana baby food. It comes out lighter in color, with a smoother texture and very yummy!
This cake is delicious. I added a drizzle of warmed up Nutella to the finished product.
