  • Banana Custard Cake recipe - Cotton soft banana cake with creamy custard. If you're a fan of banana bread, you'll love this moist banana cake!

    Banana Cake Recipe:
    - 2 Egg Yolks
    - 4 Egg Whites
    - 85 gr Sugar ( 1/3 cup + 1 tbsp)
    - 115 gr Ripe Banana pulsed in the food processor ( 1 Banana )
    - 100 gr Milk ( 1/2 cup + 1 tbsp)
    - 120 gr All Purpose Flour ( 3/4 cup + 1 tbsp)
    - 1 tsp Baking Powder
    - 1 tsp good Quality Vanilla
    - 1/4 tsp Salt
    - 1/2 tsp Lemon Juice ( or 1/4 tsp cream of tartar) Add it to the egg whites before adding the sugar.
    Custard Cream:
    - 330 gr Whole Milk ( 1 1/3 cup )
    - 2 medium Eggs
    - 90 gr Sugar ( 1/4 cup + 2 tbsp)
    - 2 1/2 tbsp Cornstarch
    - 1 tsp Vanilla Extract
    - Pinch of Salt

    Just made this......ooooooooooh so good. For the custard, I used the remaining 2 egg yolks + half a banana instead of 2 eggs. Turn out really good too! plus it added a tiny bit of banana-y flavor to the custard as well. Thanks for this recipe! I was tired of making banana bread.

    Love this cake!! I made thjis twice already and the 2nd time I took.it up a notch, by baking it in a big square pan and cutting it in half and putting custard on one layer and topping with sliced banana and then same with the top! Yummy....Thank you Emma, you rock!

    I have guests coming over for dinner tonight and decided to make this for dessert. Now I know when you have people over is not the time to experiment with new recipes but Emma's recipes have never failed me. That's how much I believe in Emma's cakes lol. The cake is in the oven as I type this and the custard is chilling in the fridge.

      I made earlier and mine didn't turn out fluffy. It was super dense. The taste was good tho so i'll have to try again another time.

      It tastes amazing! But it definitely deflates a lot unlike other sponge cakes. I ended up cutting it in half, layering it and using the custard as a filling as well as a topping. It was still very delicious and was all gobbled up fast but it isn't as airy as I thought it would be.

      @@Griff_Lo exactly what happened with mine. It was massive while baking to the point I was worried it would spill over but then deflated and turned dense. It does taste amazing though and the custard is lovely.

      @@mangot589 CRICKET MICKEY is correct. Although my allergy means I need to be a bit more careful, I don't mind because I get enjoyment out of making yummy treats for my family.
      I guess I didn't need to mention my allergy but then, I didn't want anyone to point out that I'm only posting the opinions of my family while I remained silent; which may imply I didn't like it.

    Made this today and it was delicious! The cake itself isn’t too sweet, but the custard really pairs well with it to give that extra bit of sweetness. I can’t get over how fluffy and moist this cake is :) I used 1% milk for the custard since that’s what I had and it worked great.

    Emma, I just made this and it was fab. I adjusted the creme patisserie recipe to incorporate the leftover egg yolks from the cake. I mixed 2.5 tbsp cornflour, 6 tbsp sugar, 1/2 tsp vanilla essence, 1 cup milk (adding 1 tbsp first to make a slurry, then adding the rest) and the two left over egg yolks and heated it till thickened, stirring continuously; it was perfect.

    Bunch of sweet ripe bananas in the kitchen, strong resolve to eat healthy, and then this video. Darn.
    My cake turned out a tiny bit chewy because I only had high-gluten bread flour and didn't bother to adjust it. Still tasted great! Loved the subtle banana flavor. Loved the easy custard method too. Thanks!

    This really reminds me of that Japanese dessert "Tokyo Banana"! It's like banana custard encased in a banana shaped sponge cake. It tastes amazing and I imagine yours does too Emma!

    I love custard, my sweet grandmother made floating island custard for me without measuring. It always amazed me how she could do that. It was so good and I begged her to make it whenever I came to stay with her.

    Thanks for the recipe. I actually used it to make crema de fruta. I ditched the banana and just added vanilla essence to the sponge then added fruit cocktail (drained) to the custard as topping. Everybody loved it!

      jeff that's a beautiful idea...i was thinking maybe using rthe frozen strawberry's and maybe adding a little cornstarch ...or flour to the strawberries and then swirling it in flour mixture...what u think jeff... emma...anybody..OMG...so ready to try...happy holidays

    I can't wait to try this. It kinda reminds me of a little snack cake my mom used to put in my lunch box when I was a kid (early 80's). The biggest difference is yours is real deal banana, not that artificial banana flavor. I love your "goodies"! I can't wait to see what your making every week.

      @@emmasgoodies if I can recall correctly, there were two kinds. One by Little Debbie called "banana twin", and I'm not sure what the other was called but I think it was either made by Hostess or Drakes. It's been over 30+ years since I've eaten them.

    Thank you the recipe and great instructions, Emma. This cake is amazing. It is not too sweet, super moist and comes out well every time. I have made 1.5x the recipe, added extra bananas I needed to use up and it still manages to come out great.

    Phần curstard làm theo đúng CT thì hơi ngọt, nên bớt chút chút, cốt bánh trắng mịn, ăn khá hay nhưng cũng khá bứ, vậy nên mới cần lớp curstard. Bánh này làm theo kiểu sinh nhật cũng đc, mình làm khuôn tròn 16, lớp curstard đong bột theo tsp thì sẽ lỏng hơn và trùm xuống 2 bên bánh như bánh sn vậy

    I followed the steps and 🥰👍🏻 Just sooo good. First time doing a banana cake with a meringue twist. I bake the regular way and viola when I did this just so perfect. The best! My husband and son did two slices of this because it is soft and moist. Thank you for sharing your recipe.

    I made a dozen banana breads for Christmas. They were so good except the batch l forgot to put banana in. But yeah, this would be nice for a tea or nice type get together. Will try soon, bananas are waiting.

      well if you go to the exctra isle / where you find vinilla extract you should find bananna extract , mango,orange pick banna

    I am going to try this as I HATE banana bread and generally things where he banana goes dark and a odd texture too, this looks great

      Instead of making your own banana pulp for the bread, try using banana baby food. It comes out lighter in color, with a smoother texture and very yummy!
