Thank you for telling me about this style of cooking! I have made this in an Instant Pot and now a clay pot. I will not go back to the Instant Pot. The clay pot gives a far superior flavor.
The Santa Maria cooking attachment is definitely in the beginning stages of development. It does the job. The clay pot came from Bloom Bazaar Indian Grocery & Meat Store in Bloomington, Illinois. It’s unglazed and has to be soaked in water for 24 hours. It’s very important to slowly warm up the pot and already have the oil in it while it’s warming up. The curry tasted amazing cooked in it. I will be making a South Indian Fish curry this summer in it. I waiting for the King Fish to be in season. You can get it frozen but I’m told it will taste too fishy if bought this time of year. I’m not a huge fan of the Solo stove. I think I’m going to make me a more traditional fire setup. Put a few bricks in a U shape. Wide enough so the pot sets on top.
