This was a really cool recipe idea. I like the creative use of olives. Not a big fan of capers but so cool. I never would've thought of that. Also, I love, love, love that you're using a cast iron pan. Your vegetarian and vegan recipes are awesome, Frankalicious. Thank you
It looks delicious, but my jaws are nowhere near wide enough nor able to open enough to eat such a thick sandwich. I'd have a challenge even getting to eat my lunch!
You could easily choose another vegetable to replace them. I'd have no problem using cauliflower cut into thick slices and roasted; or maybe slices of roasted rutabaga, or even sliced potatoes. There are all kinds of subs you can put in to customize a sandwich. I detest green olives, so I'd use black olives instead. And expensive, or not, I'd have to put at least a few thin slices of pastrami on the sandwich.
