    I love a good muffaletta and the shrooms are a great sub for (satly, delicious, artery clogging) deli meats!

    This was a really cool recipe idea. I like the creative use of olives. Not a big fan of capers but so cool. I never would've thought of that. Also, I love, love, love that you're using a cast iron pan.

    It looks delicious, but my jaws are nowhere near wide enough nor able to open enough to eat such a thick sandwich. I'd have a challenge even getting to eat my lunch!

      You could easily choose another vegetable to replace them. I'd have no problem using cauliflower cut into thick slices and roasted; or maybe slices of roasted rutabaga, or even sliced potatoes. There are all kinds of subs you can put in to customize a sandwich. I detest green olives, so I'd use black olives instead. And expensive, or not, I'd have to put at least a few thin slices of pastrami on the sandwich.
