Alton Brown's Easy Peanut Butter Fudge

  • Few holiday treats say "I care" quite like fudge, which is delicious, tedious, and time consuming. Since it only has 4 ingredients and takes about 10 minutes to make, this fudge says "I forgot to get you anything, so I made this at the last minute." Luckily, it's so delicious, no one will really care.
    Happy Holidays!

    Thank you, Alton, from the bottom of my heart, for this timely post. I was able to make this with peanut butter from the food bank so that I could give a present this year. I haven't been able to buy food in 6 months, so there were no eggs or milk for baking. It's been extreme quarantine kitchen here, but you and Elizabeth have made it not just tolerable, but enjoyable. Merry Christmas, and may 2021 be a better year for us all!

I just melted the butter and peanut butter in a nonstick saucepan on low heat (took hardly any time), then turned off the heat and stirred in the vanilla, then the powdered sugar. I used vegan butter (Earth Balance) and it turned out just like in the video. I also halved the recipe and made a neat little square of fudge on a parchment-lined cookie sheet, forming it with a rubber spatula. This may have been literally the fastest and easiest dessert I've ever made. Thanks Alton!

      Jif does have a "natural" variety that it's great (it does contain palm oil, though; do with that what you will) and it's pretty homogenized, as in the oil doesn't separate as what happens with the Smucker's natural one. I used to buy the latter but I find it too salty now, plus it separates so much that there's a pool of oil on top and a really hard to scoop mass below the oil... The Jif one I can eat with a spoon.

    • @Banzors
      @Banzors 3 ปีที่แล้ว +13

      I'd say based on how microwave ovens work there is a decent chance near 0 microwaves hit his phone during that split second of being in there.
      Without going into detail(because I'm really not an expert on it) the microwaves are just haphazardly sent randomly in the oven, and there are spots that don't get much if any action, that's a large reason behind the turntable(so your food moves around and doesn't sit in a hot/cold spot for the entire cooking process).

    • @OrigamiMarie
      @OrigamiMarie 3 ปีที่แล้ว +6

      @@Banzors Oh that would make sense. And once a single bit of microwave hits anything liquid, it'll get absorbed (because that's the point), which means that big bowl of liquid in the middle could have protected the phone for the short amount of time.

    Since watching this, I've made 4 batches!!! Most recently I tweaked it SIGNIFICANTLY! I added 1/4 cup cream cheese (during microwaving stage), 1/4 cup cocoa, 1/4 cup instant espresso, and instead of vanilla extract, I used caramel extract (after microwaving, before powdered sugar). It's BONKERS. You may need to add a bit more powdered sugar if your batch appears a bit thin during the final stir. Different brands of peanut butter, cream cheese, etc. Might offer different results. Just be ready in advance so you can fix it while it's still hot.

    Hi,we miss you two ! I've made a version of this for about 30 years. I think mine has more sugar but, I spread in a quarter sheet pan so about half as thick, chill, pour melted chocolate (I like dark) to cover, then Quickly sprinkle chopped peanuts. It ends up tasting like a peanut butter cup. Of course you can get fancy from there. The chocolate will crack when cut (I'm sure Alton would know what to add to fix that), so it doesn't make squares but people seem to like to be able to pick a big ol' hunk or small. Thats my favorite part, watching them turn into little kids, their eyes get big and them they go for a big piece ! I serve on a big plate, or for gifts I use pretty shirt box lined of course. Friends ask for it for birthdays and pot lucks, makes me feel good when you walk in and everyone is eyeing you for a shirt box ! AND best part is its super easy, fun, I always have ingredients in the house, and its pretty quick too.
