I have to give a shout-out to his show's composer. I'm a huge Vince Guaraldi, and if you listen carefully to the accompanying music, you'll hear an homage tune done in the style of the 'Skating' instrumental tune on the Charlie Brown Christmas soundtrack. It's not the same music, because copyrights and all that, but whomever put it together got the right, light, jazzy and nostalgic feel.

I haven't been able to buy food in 6 months, so there were no eggs or milk for baking. It's been extreme quarantine kitchen here, but you and Elizabeth have made it not just tolerable, but enjoyable. I did make this recipe . It was easy , simple to follow his instructions and turned out to be the best Peanut Butter fudge that I have tasted . It was very creamy and smooth . And I did not share any of it ! It is or was that good !

I remember my childhood cheat fudge. My dad never cooked, but at Christmas he was in charge of stirring together a combination of molten margarine, marshmallow cream and chocolate chips until it came together in a gigantic tan bowl we kept around for literally no other purpose.
Man, I am with Alton on 'unitaskers' but I think we all have a bowl that we only use for one thing, and that is just fine. That fudge sounds amazing but it's begging for the addition of rice krispies. also real butter. What's the ratio in that recipe?

I think two bags of chips, a regular size jar of marshmallow cream and a pound of margarine. Rice Krispies sounds pretty genius. I think we used nuts sometimes--maybe pecans?

I'm glad you addressed "real" vs heavily processed peanut butter, and why you should use the latter. If not, I might have used the real stuff and had it fall apart on me.
Jif does have a "natural" variety that it's great (it does contain palm oil, though; do with that what you will) and it's pretty homogenized, as in the oil doesn't separate as what happens with the Smucker's natural one. I used to buy the latter but I find it too salty now, plus it separates so much that there's a pool of oil on top and a really hard to scoop mass below the oil... The Jif one I can eat with a spoon.
I just made it with teddies natural pb and it came out perfectly! I used an immersion stick to blend the butter and pb to make sure it was emulsified and it's delicious so you can use natural pb if it's all you have 😊

Hi,we miss you two ! I've made a version of this for about 30 years. I think mine has more sugar but, I spread in a quarter sheet pan so about half as thick, chill, pour melted chocolate (I like dark) to cover, then Quickly sprinkle chopped peanuts. It ends up tasting like a peanut butter cup. Of course you can get fancy from there. The chocolate will crack when cut (I'm sure Alton would know what to add to fix that), so it doesn't make squares but people seem to like to be able to pick a big ol' hunk or small. Thats my favorite part, watching them turn into little kids, their eyes get big and them they go for a big piece ! I serve on a big plate, or for gifts I use pretty shirt box lined of course. Friends ask for it for birthdays and pot lucks, makes me feel good when you walk in and everyone is eyeing you for a shirt box ! AND best part is its super easy, fun, I always have ingredients in the house, and its pretty quick too.

You know what's even better than peanut butter fudge? Peanut butter cup fudge! I made chocolate ganache and put a layer of that under and over the peanut butter layer--it was awesome!!
You actually don't need to use a microwave. I just melted the butter and peanut butter in a nonstick saucepan on low heat (took hardly any time), then turned off the heat and stirred in the vanilla, then the powdered sugar. I used vegan butter (Earth Balance) and it turned out just like in the video. I also halved the recipe and made a neat little square of fudge on a parchment-lined cookie sheet, forming it with a rubber spatula. This may have been literally the fastest and easiest dessert I've ever made. Thanks Alton!

As someone who actually did put a phone in the microwave back when I was a kid, that made me tense up, lol. I know from experience it does NOT take long for a microwave to wreck a phone, lol.
I seem to recall Alton Brown saying once that he had a microwave with the magnetron tube disabled for use in shots like this on Good Eats. Lights up, turns on the fan, spins the platter, but no actual microwaves come out.
It could have been on a slow defrost setting or something else that would greatly reduce the potential for really damaging the phone (assuming it was a staged shot).
I tried this the other night and it came out fantastic! This is now one off my go to recipes for a quick and easy dessert that will have guests raving!

He did start out as a film student and spent a number of years operating cameras and directing music videos and commercials. Cinematography, camera angles, and framing were definitely areas of expertise for him and it carried over to his shows, I think he didn't get really good at cooking until after.
I know right? I kind of feel like we have lost something. 2020 has been viscous and cruel to everyone. To be fair, I’m a massive Good Eats fan but I can’t help but feel sad seeing these. When are people going to learn, food is just food. The only thing to worry about in there is maybe the hydrogenated stuff, because that IS fake health-food junk.. replace it with lard and you're all good probably.

@@KairuHakubi hydrogenated oils are no different than saturated fatty acids. Your body wont be mad if you eat FULLY hydrogenated. Just stay away from PARTIALLY hydrogenated... that is deadly! FULLY is just Sat. Fat... which isn't too bad!

As someone who actually did put a phone in the microwave back when I was a kid, that made me tense up, lol. I know from experience it does NOT take long for a microwave to wreck a phone, lol.

I seem to recall Alton Brown saying once that he had a microwave with the magnetron tube disabled for use in shots like this on Good Eats. Lights up, turns on the fan, spins the platter, but no actual microwaves come out.

It could have been on a slow defrost setting or something else that would greatly reduce the potential for really damaging the phone (assuming it was a staged shot).

I got here from Salty Pepper. So great to see Alton Brown! (imagine Snoopy's happy dance ears flying). My husband and I loved his Good Eats show! We just made rice his way tonight.

Considering he's also gotten grief for leaning right, they shouldn't be giving him as hard a time for essentially agreeing in denouncing efforts to change the 2020 outcome. Even if someone thinks 45 is the greatest thing since Betty White, you take your punches and bow out gracefully instead of preferring chaos.
QQ isn't his forte and not my cup of tea, but to each his own.

He did start out as a film student and spent a number of years operating cameras and directing music videos and commercials. Cinematography, camera angles, and framing were definitely areas of expertise for him and it carried over to his shows, I think he didn't get really good at cooking until after.

I know right? I kind of feel like we have lost something. 2020 has been viscous and cruel to everyone. To be fair, I’m a massive Good Eats fan but I can’t help but feel sad seeing these. To be fair also, it’s his choice on what he wants to put into the world and we as fans aren’t privy to stuff that he doesn’t want to share or can’t share. I guess sometimes we all do stuff we’d rather not do sometimes. I’ll always be a fan but I’m a little sad though. Wishing the best for them whatever they decide to do,

A store near me used to sell "bake your own reeses" kits, and the smell of this recipe after everything was microwaved and mixed was the literal exact smell from the peanut butter part of that kit
