      Honestly if you use all natural peanut butter and artificial sweeteners like erythritol and grass fed butter you could make something that is very very similar without all the diabetes that comes along with powdered sugar. Natural peanut butter and butter is relatively healthy for you in moderate amounts.

      @@nomizak Sugar consumption in itself does not increase the risk of developing type 2 diabetes. It's a common misconception. It's being overweight that increases the risk, assuming you already have a genetic predisposition for it. Therefore, eating the sugary version in moderate amounts is also fine.

    Tried to make a peanut butter once, from another recipe... the mixture came out far too dry, couldn't be worked. The genius-me from back then had a flash of insight; "well, the recipe says to use milk, so I'll just add a dash of milk in case I didn't calculate properly from ounces to grams". Welp, turns out, that one dash of milk just ANNIHILATED whatever consistency I might have had and the whole thing just melted to a goop. Never solidified, even after being left overnight. On the other hand, I had 'peanut butter and chocolate fudge spread' for my toast tomorrow. Moral; don't be afraid of mistakes, you might find something really darn tasty even from a failure!

    This is excellent fudge. I have made it twice already. If you are using Smucker's Natural Peanut Butter Creamy, I recommend 5 1/2 cups of unsifted powered sugar (instead of 4) because the peanut butter is rather runny (lots of oil). Advanced tip: 1 1/2 cups of peanut butter is the same as 1 jar of peanut butter that is 16 oz or 1 LB by weight (It is great to not have to measure the peanut butter). Tip #2: I buy the half-stick butter so the 1 1/4 of unsalted butter is especially easy to measure.

    • @lukeruppersburg140
      @lukeruppersburg140 2 ปีที่แล้ว

      Your conversion is off. 1.5 cups of peanut butter is roughly 13.5 oz. This is probably part of why you had to add more sugar.

    I cannot find the recipe under either website. It doesnt go directly to it, and a search for Peanut Butter Fudge or even Grandma's..., pulls up nothing. What is the exact title please? I don't why it's not coming up in search. My mom used to make this for us as kids. I've made it in the past too but have lost the recipe and dont recall the exact ingredient portions. Thank you!!

    Or, you can be lazy and make it how Mom made it in 1980 when she got a microwave. Name brand peanut butter (because you'll need those fillers for it to work.) Salted Butter -- because then you don't need to add any -- 2 sticks of store brand butter and a tsp of vanilla. Put a cup of PB and 2 sticks of butter in a large microwave safe dish and cover with plastic and poke a few holes. Nuke on high for 2 minutes, stir, nuke for 2 more minutes, then stir in 3 3/4 cups of powdered sugar. You've now made the exact same thing and invested 10 minutes.

    Hi Chef John, if you're serious when you ask viewers what their food wishes are, I have two. First, a French Canadian fudge called "sucre a la creme". It's a white fudge. The second wish is cabbage roll casserole, rather than actual cabbage rolls. I've tried several recipes and I only got it really delicious once by accident and never wrote down proportions. As a trained chef, I image you can get proportions right.
    I'm hoping you'll answer this food wish, and I keep my cayenne pepper at the ready while I wait. Thanks!

    I love this fudge with a dash of maple syrup. Not a lot, just enough to make it taste mapley. I'm one of those people who like a few drops of maple syrup on my pancakes, then a nice layer of peanut butter. Then a couple slices of crisp bacon, and another pancake on top. Chase it with some eggs, and a glass of milk. Oh man, I'm hungry now!

      Since it has so much sugar it will keep indefinitely. Although, after a few weeks it may become kind of hard and stale.
