I bought 2 #10 cans of yellow hominy. I drained, rinsed and just added seasonings. One tray is spicy ranch, one organic herbs tajiin , and taco. They are in the deep freeze waiting their turn. Excited to see how they turn out. Thanks for the inspiration!
I made four variations of this: Ranch, Sweet Chili, Sweet Baby Rays BBQ, and Ghost Chili Wing sauce. When I made them I did 50% sauce and 50% water. Cooked them for 4 hours in the slow cooker. The BBQ and Sweet Chili took a long time to dry due to the sugar content. All were good with the BBQ and Ranch being the kids’ favorites.

Hi John. You inspired me. Purchased three #10 cans of hominy. I am experimenting with it. My first can, I split into four parts. Each of the four parts will be slow cooked separately and each 1/4 will lightly fill one tray each for a total load of four trays. Each tray will have a different flavoring. The flavors I am in the process of preparing for the freezer prior to freeze drying are: Sweet chili sprinkled with Slap Yo Mamma and Lime; Smokey Mountain BBQ sauce; Honey Mustard BBQ sauce and Ranch dressing mix combined with sour cream in some of the hominy juice in the can. I have a couple loads in front of it but but by the weekend, I should know which of the four I like best. Thanks for inspiration! Probably, I will like them all and prefer a variety pack of FD "Corn Nuts."
@@One1Luv I like variety and so that is my first vote. However, my favorite was Smoky Mountain BBQ. My next run will be of: Blackstone Tequila Lime, Raspberry Chipotle, Chinese BBQ Sauce and Salt, Pepper, Garlic and Ginger.
Finally got a break in my fd schedule and these are in the crockpot right now will be going in the fd in the morning after freezing tonight. THANKS John, we always count on you to come up with something different!

Would love to see you try the hominy with ranch dressing and maybe honey mustard and BBQ sauce. I really did enjoy your video. You really come up with some unique ideas. Thank you for sharing and teaching us.
I drained a big can of white hominy well. Then I sprinkled dry ranch dressing powder, just a little, mixing well between sprinkles. I also did BBQ sauce and Italian dry dressing. Then into the trays, into the chest freezer. I put them in the FD this morning. I can't wait to try them out.
That is great, I tried something very similar but was not satisfied with the texture of the FD Hominy afterwards. I think the cooking really helped the texture and also brought out that corn flavor. Let me know how yours comes out.
just a hint I figured out with packaging. Get a very large bowl and put your freeze dried items in the bowl and then put them in the mylar bags. so much easier than trying to fill the bags out of the trays.
I use a wide mouth canning funnel, the gusseted bags stand up and hold the plastic funnel without help. Then I use a spatula to scoop them into the funnel. When it gets low, I pick up the liner, fold a little and slide the contents into the funnel.
I always freeze before freeze drying. I think you should be ok, but there is corn syrup in the sauce and I would hate to see a mess in your FD because of not pre freezing
In over 350 videos that I have done I haven't changed a setting from factory. I guess if I did a hard candy or a delicate yoghurt culture I would change them. Otherwise, I press start and FD for 40 hours (pre frozen) or until dry.

I am new to freeze drying and have already bought your cookbook. Do you have to freeze these before you put them in the freeze dryer?
