It took me a while to figure out what my small issues were with AOT because, like you said: "it's a nearly flawless series". 1. The greater world felt like a vehicle to end the series (which isn't bad) but i was anticipating something more built up. 2. Are POV changes after the timeskip and we were no longer experiencing things in real time with Eren while he was also 3 steps ahead of us when it came to making decisions and outcomes.
I think you might enjoy mistborn era 2! Although honestly, I think reading the stormlight archive pulls most people into the world enough to be like "ah i guess i have to read all the cosmere books now"

Honestly, while I do enjoy the Frieren manga (especially the current arc, which is actually just peak) I cannot say you will enjoy it as much as the anime. For a story where the main themes are about enjoying life while you can, take things slow, appreciate those around you, and that there's no need to rush... it is incredibly fast paced. As an example, take chapter 30/episode 14 which is when Frieren loses the ring Himmel gave her after their carriage gets picked up by some giant bird. In the manga, the flashback with Frieren picking out that ring with Himmel is a grand ol' total of 1 and a half pages. Compared to the anime, there is no slow motion of Himmel getting on his knees. There is no panel of him gently holding her hand and putting the ring on her finger. No surprised Frieren face, there's not even a panel of Frieren reacting to him doing all of this. Himmel says while walking beside her, "Here. Frieren." and flip to the next page and he's already on his knees. And also that's the end of the flashback. And hell, while the manga included a clock in the background of that scene, the anime's amazing direction put the clock BETWEEN the two of them, as if to convey time being what separates them. That's just one example. The story beats are all there in the manga. Nothing was really added to the anime. But it was just so, so so much more fleshed out with so much more time to allow the viewer to take in the moment. It was calm, sweet, and beautiful. Again, manga's not bad or anything, but the anime certainly knew exactly what to do to improve on it so switching to the manga will probably take time to adjust to, you know?
season 1 was about a 6 or 7 out of 10 for me. If there had been one episode showing young Powder raised by Silco, how she (probably) started out hating him, but she used him to fill the place Vi left. and how Silco used her to replace the familial relationship left by vander. Show their similarities, how/why they don't want to be alone. Bonus points if it also showed the history of Vander and Silco (war and betrayal) build that foundation to show why Silco was willing to keep her around when she's screwing up his business and his henchmen are betraying him for his loyalty to her also, you know... if powder and ekko had a single conversation together before their fight on the bridge (even without having a conversation that fight was still my favorite moment of the season) one more episode would have made it a 10 out of 10 :) but season 1 didn't even hook me enough to watch season 2. I heard the pacing was even faster in season 2, new characters were introduced (I didn't trust the series to establish the dynamics between characters) so I just didn't watch it

The funny thing is that Arcane is considered a failure despite the popularity. It didn't turn a profit (because it cost so much to make) and it didn't increase the player base of the League of Legends game which was the main point of making the show. People will remember it fondly but it failed it's two goals.
Considered a failure by who? Riot themselves have said that it was a success and it's clear since they're aiming to do more. General fans and critics also agree that it was a great show.

Personally, I loved Arcane, but I always felt it would be twice as good if the plot went at half the speed.
That’s all I needed, one or two episodes during the time skip and it would be perfect for me :)
