Great recipe!! I salted the cabbage first, put in a Callander over a large bowl and let it sit in the refrigerator for 2 hours. Lots of extra moisture seeped out. Then I rinsed the cabbage mixture really well and transferred it to a salad spinner to remove all of the excess moisture from the rinsing. I used your mayo based dressing, exactly as your recipe stated (except I only used 1/8 tsp of salt). Voila!!! A wonderful tastings coleslaw, without the dressing getting soupy. Thank you.

In the summer when we have home grown tomatoes all over the place, I dice a tomato over the slaw, the juice runs into the slaw, then add the diced tomato...different and adds such a fresh twist.

Both great recipes. I have found for even lighter option you can remove the oil altogether. The sweetness from the ACV still comes thru, and you can always add a little hot sauce for flavour. 😋

I was looking up a recipe to make for coleslaw within mayo because my boyfriend doesn't like mayo and yours looks so nice and fresh and I remembered once in a while my dad would make coleslaw with all red cabbage and it would give it such a beautiful color. He would cut the cabbage really thick and chunky. Cabbage is so good for you raw.
Ikr. I love it so so much. I add some clarified butter, just a little, mix with honey and yogurt and then add veggies. God! So yummmmmmm! Specially after 2-3 hrs.

Something I've learned from my days in Brazil was to shred cabbage really fine with a vegetable peeler. Makes a huge difference not to nly for coleslaw but for soups that require finely chopped cabbage.
Most probably you will not understand the language but will understand the technique. Loved it!! The general recipe was good and of course I didn't have a couple of the accents like carrots. Used my garden's red bell pepper for color and everything, esp. the Braggs apple cider vinegar. All was good, today, but as noted tomorrow it'll be even better, if it were possible. Thank you.
I love cabbage slaw with vanilla yogurt and dried cranberries (craisins). I made shredded zucchini yellow squash and carrot slaw with plain greek yogurt and sliced bing cherries (pitted). Good for people who cannot digest the cabbage. You could also shred iceberg lettuce and serve it with Macintosh or Granny Smith apples that would be great with lemon greek yogurt and poppy seeds. 🙂
Really like the vinegar coleslaw, thanks, I have not used honey before, it is the trick, takes the bitter off the cabbage and the sour is tamed in the vinegar..yum

And this is an amazing recipe to meal prep for 3 days on my work trips. I’m a flight attendant, so I notice that recipes that contain vinegar usually stay fresher in my lunch cooler. Especially since i have to keep it with ice all the time and sitting there it can change the flavor of foods

Nice recipe thank you! With your mayo recipe I added powdered garlic salt, black pepper and onion very thin slice and on top of the coleslaw I put slice cucumber and strawberries. Very delicious 😏
ill have to try the vinigar based one sometime, when i make cole slaw i usally just mix in straight italian dressing and a bit of celery salt to help get the cabbage to wilt and soften. never dawned on me that i could whip up my own viniger/oil for it ... looks like i'll be making some submarines soon ... i could seriously eat this alone between two slices of bread but it is much better with a bunch of meat and cheese.
I am not a fan of mayo or salad cream based coleslaw, so the vinegar dressing is a great alternative and you can change the seasonings to your taste. I love putting a bit of fennel in my coleslaw it adds a fab flavour and a little something different..... xx

@tinylilmatt that was incredibly interesting to learn 😯🤗 I'm from Germany and over here it's different from region to region. There's a traditional dish with cooked cabbage. When adding lemon juice it turns more red (regions with this recipe refer to it as Rotkohl/-kraut = red cabbage). When adding Natron it turns more blue (those regions call it Blaukraut = blue cabbage) 😊
When I was little, my grandfather would use pineapple juice to sweeten the dressing for the coleslaw. I love it!

nice recipe. i did the two cabbages and the carrots, with a half can of crushed pineapple and mayo, salt and pepper.
The mayo recipe is exactly what I use but I add horseradish to add an extra kick to the slaw would recommend trying

Can you substitute celeryseed with something else? Can't find that anywhere. Perhaps use of some celery as such would do the trick?

The coleslaw with vinegar is a typical food of my country :) we eat it with pupusas and a tomato sauce and we call it curtido
I had no idea apple cider vinegar was the amazing taste in Curtido 😋 I'm from Guatemala but I love Pupusas!

I had vinegar coleslaw once at BBC place and It was delicious. I found couple of recipes but wasn't happy with them. I need to try this recipe.

I use a red onion n add sliced jalapeños to the vinegar slaw. I slice the jalapeños lengthwise.
