About 5yrs ago I had my first California Burrito in San Diego. I can’t remember the restaurant. I think it was behind the baseball stadium on the corner. This burrito was huge. I bit into it and there it was, french fries!! I said “where have you been all my life!” Delicious!!!!

I made this today for lunch with some left over chicken I had from last night. I just chopped up the chicken threw it in a pan of oil and put in everything like Sam did for the Marinade. And when it was done I melted the cheese on top. For the fries I microwaved some tater tots and then fried them up. All that to say you make this really simply and it is SUPER tasty and great!! I like to substitute a can of Rotel for the tomato sauce in the rice ss well as saute some diced onion and then add the rice to toast. All this equals more flavor. People who just add water instead of stock should probably add salt as well
I try to use stock but when I don’t have any, water and a cube of chicken bouillon with garlic goes greatly as well as tossin some onion slices while the rice toasts
@RO RO If I'm making carne asada or beef I use beef stock, if I'm using chicken I use chicken stock. I usually use diced canned tomatoes and I dice up an onion to add as well. I prefer fresh garlic but often cheat by using canned minced garlic... it's tough to beat the price and convenience. I prefer rotel or canned tomatoes though as they have more flavor than fresh tomatoes. Tomatoes are the only canned item that I prefer to fresh... I've heard many chefs say the same. Boils down to personal preference I suppose. There is definitely a distinct difference.

I've tried a few of Sam's recipes. Pretty good stuff, 98% of the time he knows food and ingredients. Last one I tried was the carne asada taco's. Sorry Sam, but for my tastebuds the soy sauce ruined it. Just my opinion, I'm sure lots of people loved the addition, but next time I'm leaving it out. Yes, next time. I'll be making the recipe again because it was good, just adapting it for my own preference. I get the strong feeling that's what you want us to take from these vids, don't slavishly follow the recipe, adapt to what we like and most of all enjoy our food!

The majority are Persian Limes, which do not require pollination. They actually have 3 sets of chromosomes rather than 3. Most limes sold in the US are actually grown from grafting from major fruit producing Lime trees and are technically clones of the parent. They grow from the bloom, but don't have to have pollination because of the extra set of chromosomes. Lemon's, on the other hand, require cross pollination because they only have 2 sets of chromosomes like most plants. So both are not very easy to grow in large numbers. And you also have to guard against those Lemon stealing ho's.
I just made this thing and oh my goodness, it is amazing. All the flavors together (including the rice) work in perfect harmony. Word of advice, GET THE CHIPOTLE SIZED TORTILLA. Anything smaller simply won't work.

I use plain tomato sauce as well but I also add onion and jalapeño with the rice beforehand.

Sam and team, when you guys find the appropriate time, maybe Super Bowl season, can you do a flautas recipe. These are awesome party foods that you can top with queso sauce, sour cream and avocado sauce, or a red/green chili sauce. Thank you for putting out great content to the public.
I've tried a few of Sam's recipes. Pretty good stuff, 98% of the time he knows food and ingredients. Last one I tried was the carne asada taco's. Sorry Sam, but for my tastebuds the soy sauce ruined it. Just my opinion, I'm sure lots of people loved the addition, but next time I'm leaving it out. Yes, next time. I'll be making the recipe again because it was good, just adapting it for my own preference. I get the strong feeling that's what you want us to take from these vids, don't slavishly follow the recipe, adapt to what we like and most of all enjoy our food!

Hahaha....came here to get some tips for my chicken burrito....I already had the thighs marinating, just needed something to hold it all together....with NO rice....the sour cream, hot sauce, cumin will be perfection...and the cheese melted over the top...So California!...I kept saying...the Rice the Rice...even though mine will not have rice. The majority are Persian Limes, which do not require pollination. They actually have 3 sets of chromosomes rather than 3. Most limes sold in the US are actually grown from grafting from major fruit producing Lime trees and are technically clones of the parent. They grow from the bloom, but don't have to have pollination because of the extra set of chromosomes. Lemon's, on the other hand, require cross pollination because they only have 2 sets of chromosomes like most plants. So both are not very easy to grow in large numbers. And you also have to guard against those Lemon stealing ho's.
