As a mom of a child with epilepsy, who did medical keto for two years (where EVERYTHING was weighed to the gram), thank you for differentiating this. It always frustrates me when people call everything keto, when it's really more low carb/high fat (LCHF), and not even remotely keto (which was created to treat diabetics before insulin was available). ❤❤❤
I love your videos! We are Cajuns from Deep South Louisiana and all our cultural foods are extremely high carb. My husband is diabetic and I’m desperately searching for different low carb recipes that he likes and will give him variety. Thank you for this video. I will try some of these recipes. And I definitely know we have to watch carb contents for every ingredient.
Just try tweaking things, I’m trying to lose weight so there is no way I could do that having all that high fat dairy in there, not to mention all the salt in the dairy then normally added salt to a dish also, I normally look at how many ingredients in the dish have salt already in them before I add any extra salt, and I use way less sugar also or sugar alternatives. If your making something that’s got a few different carb components to it just look to see if some of those extra carbs are really needed or not or if you can cut some down or substitute some for other flours.
Dr. Sten Ekburg has vids on YT that explain how to put our bodies into Ketosis as opposed to insulin Resistance ( fat accumulation, obesity, Type 2 diabetes, and more health problems) Ketosis is when our body's use the rest of our metabolic system to burn fat and renew our damaged cells. To put our body into ketosis we need to interupt the metabolic imbalance of the Carb/Insulin cycle. It's facinating to learn how it works. It's even better to experience your body actually in Ketosis. It's more than low carb. Low carb diets will not rebalance the disordered metabolism. It's about what percent of daily calorie intake you eat for the 3 macronutrients: Fats, Protiens and Carbs. When I started I dis strict keto until I could feel my body shift into Ketosis, once there I discovered my tastes chamnged for richer fat-based foods. I do not look at it as a lack of variety, I look at it as my body's God-given system to reverse metabolic disorder and some disease by actually making my body achieve better health vs taking synthetic meds that all have negative side effects. I'm not anti-med at all. I just love feeling so much healthier and having less pain from inflamation! I drink seltzer everyday, it's just been a favorite for me. I do miss the cold juicy taste of fruits. I recently found liquid water flavorings with Stevia and a little in my seltzer on ice is excellent. Stevia is one of the safe non-sugar sweetners that don't trigger Insulin. Do a YT search for Keto recipes... tons. My next cooking will be Keto ginger snaps and Keto butter cookies. Remember it's a change and adjustmnent. it's a marvolous change!
Try mashed cauliflower in place of potatoes or mashed turnips. An excellent low carb delivery system. Or sliced chicken breast in place of noddles in lasagne or in place corn tortillas for enchiladas.
Do a little study of Ketosis. It may help change everything about your hubby's T2D (a metabolic disease) and whole life. Learn about what is happening in our metabolic system when we are carb-based triggering insulin release and when we are in ketosis the other part of our metabolic system.

That sausage recipe looked really good! I don't eat pork, but I think I could make it work with chicken sausages or maybe even vegetarian sausages. I think a creamy tomato sauce with cauliflower rice is absolutely delicious!
Oh yes, I think it would work fine with chicken sausages! I liked all these recipes, but that tuscan sausage was my favorite. The soup was delicious, too.

Love this video! This is exactly the "keto / low carb " I try to follow. Just cutting out the rice, pasta, and potatoes & bread/tortillas is huge for me. (I can easily forgo the first 2, the last 2 is a bit harder) I really liked the recipes. Also! I need to get a crockpot that does all that!
I don’t necessarily think low carb means cutting out carbs totally, which is actually dangerous unless you have a medical condition where you do have to cut things out, but just find lower carb options or use less in general, I actually measure out half a cup of any cooked carb, rice, pasta, spaghetti, mashed potato, and that’s my serving. Your body actually does need carbs, look up the role of carbs in your body, they provide your muscles with the energy needed to do your workout or just to do their job each day, all food groups in the food pyramid are needed by your body (unless a medical condition prevents it), so should never cut out any food group at all, and if you do then you need to find alternatives to give you your correct daily nutrients etc etc that your body needs. I’m not directing this at you 😂, this is just to everyone reading it 😊
@@dianecuthbertson2686 I respectfully disagree. You have to understand what human ketosis is to understand what keto diet is. It's not just a low carb diet. It's a formula in % of the 3 macronutrients that we eat: carbs, proteins and fats. The reason for the formula is to shift our body's carb - insulin metabolism to our body's fat/keytone body metabolism. It actually changes the way our body metabolises oue food intake to cellular fuel. Glucose ( sugar from carbs) can fuel our cells but, it is toxic to our body and deadly to our brain if too much is in our blood. Insulin is the emergency process that removes glucose out of our blood to protect our brains. It sends it to the liver to convert to stored energy in fat cells. When we eat a basic carb-based diet this insulin cycle leads to metabolic disorder. First Insulin Resistance which is where our cells stop recieving glucose from insulin that is trying not to overload our liver and pushes cells to take more sugar into them. The more insulin the more the resistance; the more the resistance the more the insulin. We become so adjusted to it that we become metabolically imbalanced or disordered. Then we cycle into eat, increase fat, have more hunger/cravings, eat more, more fat until overweight becomes obese, then Type 2 Diabetes because our insulin regulation becomes disorder or diseased, the disease process continues with high blood pressure and fattty blood vessels, stroke, heart disease... The way to stop this cycle is to stop the Insulin/carb process. The body can metabolize food to fuel by releasing our fat storage and burning our fat energy. Fats breakdown into ketone bodies or ketones. When our body completes it's metabolic shift into keytosis, it "rests" the Insulin cycle and allows the disorders to reverse as much as is possible. So it's not about what we think is a common amount of carbs we can eat. It's about grams of fat, protein and carbs we can eat daily for the amount of calories our body needs to put us into ketosis. That's about 25-50 grams of carbs/day. It's not a fad diet. It's existed in us since we roamed the earth killing meat ani,als and eating berries before man learned agriculture and artificial enhancers and GMO technologies. The entire metabolic system is : FOOD > STORE (insulins role) > BURN FUEL > FAST AND REPAIR CELLS. Reapeat. By burning fats, we release a hormone - leptin - that tells us we are satisfied and not hunger that leads to fasting (we fast everyday during sleep) longer fasting causes Atophagy to begin which recycles our dead and damaged cells also dns damaged, some mutated cancer cells and even some viruses. It's the cycle of life and longevity. I agree with entering ketosis with learned knowledge and I have told my MD who thinks it's silly but admits that it was not a subject taught in medical school. He trird to put me on statins for high chileresterol but it caused serious pain in my leg muscles. I saud according to my understanding of a keto lifestyle my cholesterol should statr declining. It has for months. He does not try to discourage me from keto anymore. A diabetic absolutely must work with their MD because keto will lower and regulate insulin so medication will need to be adjusted.

Help! My husband brought home 48 (not a typo- 48!) pounds of frozen green beans. It should last the two of us for the rest of our lives. The entire freezer is full of beans. I’m going to give some away but I still need a lot of green bean ideas! Edited to say, I just checked the beans. And it’s 48 2-pound packages of green beans. So 96 pounds! 😂😂😂
This made me laugh out loud. Here are some ideas to help you eat the elephant: ham, green bean and potato soup, green bean casserole, Greek green bean skillet (cauliflower rice, ground beef, green beans, Kalamata olives, Greek vinaigrette and feta). You can chopping the green beans and use them in place of peas in dishes like fried rice and casseroles. Good luck!
I would be excited to find green beans at a bargain, although canned is my preference. One of my dogs is on a diet and green beans are a great low calorie filler for them. My dachshund gets an entire 14 ounce can daily and 1/3 cup of low calorie kibble so I am always buying green beans! Even the store brand gets pricey so I would love to find a deal. Fortunately I have a small upright freezer so I would have room to store a good amount if it, but probably not 96 lbs.! So, if you have a dog that is a bit chubby, speak with your vet about what an appropriate ratio to use and microwave some green beans for them. Even if your dog isn't chubby, green beans are a great snack for any dog! I don't know about cats; I don't think they would hurt them but I am just not sure if they would like them! My mom always put some bacon into cook with the green beans when I was growing up. A quick way to add some extra flavor to a basic side dish.
We love green beans in our house! I like to steam or boil them then toss with butter and breadcrumbs for an easy side dish. Or simmer them with a little sausage or bacon.
One of my favorite meals with green beans is sausage, green beens, sour cream, and either thyme or italian seasoning. I always add olive oil to my food plus I include the meat fat. The key is to have 75% of your calories in Fat, approximately 20% protien and only 5% carb. Yes Keto is a very low carb diet. The purpose of not eating carbs and eatin so much fat is to shift your body's metabolism away from the Carb/Insulin cycle and put it into the Fat Burn cycle called ketosis. It's great being in ketosis! it's also something you have to choose to do and learn about. Once you experience it, you will never forget it. I started because I had terrible sugar cravings and was getting more and more obese and closer to Type 2 diabetes. Once I experienced how better my body felt, I have not been willing to give it up. When I go out of ketosis I feel much more pain from inflamation and artheritis, less energy, the sugar high and dive to fatigue, no stamina or endurence and brain fog, eventually I will have an episode of depression when i am not in ketosis. To me not eating all the foods I used to eat is mitigated knowing what they do to my body I am Insulin Resistant from having eatten a high carb diet.
Thanks for all your videos, Mindy! I'd love some vegetarian crocktober recipes (just if you feel that would be beneficial to your family). I find vegetarian crockpot recipes hard to come by. It seems to just mostly be soups. 😂
I would make a lentil stew. You can use veggie stock and add carrots celery onions. I make mine with garlic powder cumin smoked chili powder, gives it a little Mexican flare. I use chicken broth in mine but I’m sure the veggie broth would be just as good.
I think that might be because the crockpot is mainly used to slow cook proteins so they’re tender. It’s not the best for vegetarian dishes which can be made just as easily on the stove without overcooking tender veggies. It is a great tool for slow simmering marinara, making beans from dry, homemade applesauce, and a few other vegetarian staples. I plan to make yogurt in it for another video this month. :)

These meals looked so good and filling. My grand kids will eat things they might turn up their noses at, until they are told they get to finish it their way with add-ins. The love taco/nacho bars and baked potato bars.
All of these look amazing. I never thought to turn the spaghetti squash upside down to roast…I’ve been struggling keeping it tented with foil cut side up since I can’t seem to cut one in half evenly. Genius!
I have a video idea Mindy! I would LOVE to learn about different slow cook meats, how to shop for them, how cook to them in the crockpot, and recipe ideas. I am a pretty experienced home cook but also a former vegetarian. Now I'm stuck on basic meats for family meal ideas - either sausage, chicken breast, chicken thighs, ground beef or turkey. I want to learn how to cook delicious (and maybe cheaper) cuts that you mentioned like pork shoulder, chuck roast etc. I am so intimidated by that area of the meat section in the grocery store! Looks delish! Wow a lot of dairy, block of cream cheese, milk & cream, cheese, & normally butter, I would probably use half those amounts and add in a little more chicken stock. I have noticed the same with lots of American dishes, they all use lots of different dairy ingredients in the one dish, I’m in Australia and we would only use the two, cheese, can’t skip the cheese 😂 and probably anywhere between 1/4 cup to half a cup of cream and that’s it, we don’t tend to use cream cheese in many savoury dishes, we normally make cheesecakes with our cream cheese.
I watch alot of foodtube and ive noticed too that Americans are very heavy handed with dairy in their recipes! Granted this video is low carb so fats like dairy would be higher proportionally but it does seem like a lot from a uk/European perspective. The easiest example i think is lasagne, an Italian/European style lasagne is made with a white sauce vs American Italian lasagne uses ricotta & mascarpone and usually other cheeses in place of the white sauce. Considering a lot of Italian cuisine comes from the "poor kitchen" the American version is expensive financially as well as calories!

Oh my I have ingredients, except Parmesan garlic sauce, for all 3 recipes-have ground beef & herbed riced cauliflower thawing out in fridge & now can decide what to make. Also, have sausages thawing out in fridge! Chicken in freezer! WOW! Thank you. BTW, low carb/ keto miracle noodles( a little pricey), however, a nice change up from cauliflower rice, spaghetti squash, etc. Amazon has them.

I notice alot of budget recipes involve pastas, rice, beans, veggies which I have absolutely despised for the almost 34 years of my life. How does one get passed the child like pickyness? Lower carb is what most of us probably need. Don't want duabeties and have been trying to do lower carb and meat. Any would be interesting to look at. Real keto includes some veggies that aren't bad.

As a low carb/keto/ketovore viewer...you nailed it... and that is exactly what I do for my kiddos... make the entre keto...and then add starches for them if needed... many times they will eat what I make... ❤️
That was what we did years ago when my husband was trying it out. These dishes were delicious, we'd eat them any time even though we don't follow that particular lifestyle.
@SeeMindyMom I'm actually dehydrating tomatos from the garden ( end of the season) for "marry me chicken" very similar to what you made today! I have alot of sauce put up already so why not dry some out ❤️ in life someone will always be cranky about something... I'll tell my girls all the time... Baskin Robbins has 31 flavors for a reason... we are all different...and like different things! Why get mad if you like vanilla and I like rocky road! Take the good...leave the rest! ❤️
Anyone here have an idea how to get a similar flavour to rotel? I live in Austria (Canadian opera singer here...) and would love to find a way to match that flavour...(i think i could get some cans shipped...at 4-5 euros per can 😂)
Rotel is just diced tomatoes and diced roasted Hatch green chilies. You can probably find Hatch green chili in cans, if not you could roast any green chili (I might sub poblano) and dice them, then mix with either fresh or canned diced tomato. Good luck!

But I grow my own jalapeñosAND habaneros in the summer. Maybe combining jalapenos is enough? I usually dry them, but maybe freezing some. I've never actually had rotel, but so many slow cooker recipes use it, so looking for an option here.
@@KristinaAgur Basically any pepper will do. Green chilis are a little hotter that Jalapens and habaneros so add a few more seeds to the diced tomatoes. You can grow green chili peppers too. You can "roast" a pepper over the stove flame on a fork.

Great! To define Keto(sis): the bodies metabolic process for changing food into fuel as opposed to the other metabolic process of Insulin conversioin of carbohydrates. Our keto meta burn fat to make keytone bodies for fuel. Our brains love Keytones whereas too much sugar will damage and kill brain and other cells. Our Keto meta will actually release the stored fuel that we carry as fat. It also releases Leptin our saiety hormone. Carb/insulin diets will actually through our metabolisms into disorder. Too many carbs=too much suger in blood=danger to brain= large releases of insulin to remove it from the blood=liver converting to fat=too low bld sugar=hunger hormone= cycle of eat>store>fat buildup, which is obesity. Then Insulin Resistance (metabolic disorder)= Type2 Diabetes (metabolic disorder)= Fatty Liver, Artery blockage, heart disease, strock, high BP.... In Ketosis our bodies are most prepared to go to thru the next two stages of complete Metabolism. Fasting which puts the body into Autophagy or Recycle and repair. This is when our body begins to "eat up" dead or damaged cells for the body to reuse parts or distroy. It will destroy some virus' and some cancers. I hear you that you don'y want to buy commercial keto products but, in all fairness aren't you buying commercial foods that trigger an Insulin response. The challange for ketosis is to get a finite number of calories from fat(high) a moderate amount from proteins and a very small amount from carbs. I eat 20 or less grams of carbs/day. The healthiest way to reverse Insulin Resistance to prevent T2D etc. is to stay in ketosis and give our cells a chance to resensitize to Insulin by resting the body from the insulin metabolism. PS the brain loves keto so much that it won't have seizures like it does with a carb based diet. Before pharmecutical treatment for seizure disorders, a keto diet was the best therapy and it still works. It's really wonderful to experience you body in ketosis - like no other thing you've experienced.
Slightly off topic but… I started following you quite a while ago when you were doing WW content. Just curious on how you’ve managed your weight loss while no longer sticking to a “ traditional diet”?
It's the one I happened to have in my fridge at the time, but it will work with any cream cheese. I get that greek-style one at Walmart from time to time. It's higher in protein than traditional.
Definitely a sore spot for me is the higher carb recipes. It is really boring to just eat plain meat and veggies. You are 100% right that you just need to live without the starches but it's difficult to cook homestyle foods that way. Casseroles are really hard to make without a carb. It's getting to that season where you want to just dump everything in s crock pot or dish and I just can't anymore. Thanks for giving me a midweek boost.
These sausages are just to full of grease for me. I love the flavor but I have to take it out of the skin, break up and sauté, draining and blotting all the grease out that I can get out. The spices ones have so much flavor and since you are adding red pepper flakes why not give it a try?

I make gumbo that is keto friendly, and I use cauliflower rice, and honestly, when you get all of those Cajun spices in there, you cannot tell!

I don’t necessarily think low carb means cutting out carbs totally, which is actually dangerous unless you have a medical condition where you do have to cut things out, but just find lower carb options or use less in general, I actually measure out half a cup of any cooked carb, rice, pasta, spaghetti, mashed potato, and that’s my serving.
Your body actually does need carbs, look up the role of carbs in your body, they provide your muscles with the energy needed to do your workout or just to do their job each day, all food groups in the food pyramid are needed by your body (unless a medical condition prevents it), so should never cut out any food group at all, and if you do then you need to find alternatives to give you your correct daily nutrients etc etc that your body needs.

@@dianecuthbertson2686 I respectfully disagree. You have to understand what human ketosis is to understand what keto diet is. It's not just a low carb diet. It's a formula in % of the 3 macronutrients that we eat: carbs, proteins and fats. The reason for the formula is to shift our body's carb - insulin metabolism to our body's fat/keytone body metabolism. It actually changes the way our body metabolises oue food intake to cellular fuel. Glucose ( sugar from carbs) can fuel our cells but, it is toxic to our body and deadly to our brain if too much is in our blood. Insulin is the emergency process that removes glucose out of our blood to protect our brains. It sends it to the liver to convert to stored energy in fat cells. When we eat a basic carb-based diet this insulin cycle leads to metabolic disorder. First Insulin Resistance which is where our cells stop recieving glucose from insulin that is trying not to overload our liver and pushes cells to take more sugar into them. The more insulin the more the resistance; the more the resistance the more the insulin. We become so adjusted to it that we become metabolically imbalanced or disordered. Then we cycle into eat, increase fat, have more hunger/cravings, eat more, more fat until overweight becomes obese, then Type 2 Diabetes because our insulin regulation becomes disorder or diseased, the disease process continues with high blood pressure and fattty blood vessels, stroke, heart disease... The way to stop this cycle is to stop the Insulin/carb process. The body can metabolize food to fuel by releasing our fat storage and burning our fat energy. Fats breakdown into ketone bodies or ketones. When our body completes it's metabolic shift into keytosis, it "rests" the Insulin cycle and allows the disorders to reverse as much as is possible. So it's not about what we think is a common amount of carbs we can eat. It's about grams of fat, protein and carbs we can eat daily for the amount of calories our body needs to put us into ketosis. That's about 25-50 grams of carbs/day. It's not a fad diet. It's existed in us since we roamed the earth killing meat ani,als and eating berries before man learned agriculture and artificial enhancers and GMO technologies. The entire metabolic system is : FOOD > STORE (insulins role) > BURN FUEL > FAST AND REPAIR CELLS. Reapeat. By burning fats, we release a hormone - leptin - that tells us we are satisfied and not hunger that leads to fasting (we fast everyday during sleep) longer fasting causes Atophagy to begin which recycles our dead and damaged cells also dns damaged, some mutated cancer cells and even some viruses. It's the cycle of life and longevity. I agree with entering ketosis with learned knowledge and I have told my MD who thinks it's silly but admits that it was not a subject taught in medical school. He trird to put me on statins for high chileresterol but it caused serious pain in my leg muscles. I saud according to my understanding of a keto lifestyle my cholesterol should statr declining. It has for months. He does not try to discourage me from keto anymore. A diabetic absolutely must work with their MD because keto will lower and regulate insulin so medication will need to be adjusted.

Help! My husband brought home 48 (not a typo- 48!) pounds of frozen green beans. It should last the two of us for the rest of our lives. The entire freezer is full of beans. I’m going to give some away but I still need a lot of green bean ideas!
Edited to say, I just checked the beans. And it’s 48 2-pound packages of green beans. So 96 pounds! 😂😂😂
This made me laugh out loud. Here are some ideas to help you eat the elephant: ham, green bean and potato soup, green bean casserole, Greek green bean skillet (cauliflower rice, ground beef, green beans, Kalamata olives, Greek vinaigrette and feta). You can chopping the green beans and use them in place of peas in dishes like fried rice and casseroles. Good luck!

I would be excited to find green beans at a bargain, although canned is my preference. One of my dogs is on a diet and green beans are a great low calorie filler for them. My dachshund gets an entire 14 ounce can daily and 1/3 cup of low calorie kibble so I am always buying green beans! Even the store brand gets pricey so I would love to find a deal. Fortunately I have a small upright freezer so I would have room to store a good amount if it, but probably not 96 lbs.! So, if you have a dog that is a bit chubby, speak with your vet about what an appropriate ratio to use and microwave some green beans for them. Even if your dog isn't chubby, green beans are a great snack for any dog! I don't know about cats; I don't think they would hurt them but I am just not sure if they would like them! My mom always put some bacon into cook with the green beans when I was growing up. A quick way to add some extra flavor to a basic side dish.
We love green beans in our house! I like to steam or boil them then toss with butter and breadcrumbs for an easy side dish. Or simmer them with a little sausage or bacon.
One of my favorite meals with green beans is sausage, green beens, sour cream, and either thyme or italian seasoning. I always add olive oil to my food plus I include the meat fat. The key is to have 75% of your calories in Fat, approximately 20% protien and only 5% carb. Yes Keto is a very low carb diet. The purpose of not eating carbs and eatin so much fat is to shift your body's metabolism away from the Carb/Insulin cycle and put it into the Fat Burn cycle called ketosis. It's great being in ketosis! it's also something you have to choose to do and learn about. Once you experience it, you will never forget it. I started because I had terrible sugar cravings and was getting more and more obese and closer to Type 2 diabetes. Once I experienced how better my body felt, I have not been willing to give it up. When I go out of ketosis I feel much more pain from inflamation and artheritis, less energy, the sugar high and dive to fatigue, no stamina or endurence and brain fog, eventually I will have an episode of depression when i am not in ketosis. To me not eating all the foods I used to eat is mitigated knowing what they do to my body I am Insulin Resistant from having eatten a high carb diet.
I make the garlic Parmesan sauce over chicken breasts all the time everyone loves it , you can also use a bottle of Olive Garden dressing
Thanks for all your videos, Mindy! I'd love some vegetarian crocktober recipes (just if you feel that would be beneficial to your family). I find vegetarian crockpot recipes hard to come by. It seems to just mostly be soups. 😂
I would make a lentil stew. You can use veggie stock and add carrots celery onions. I make mine with garlic powder cumin smoked chili powder, gives it a little Mexican flare. I use chicken broth in mine but I’m sure the veggie broth would be just as good.
I think that might be because the crockpot is mainly used to slow cook proteins so they’re tender. It’s not the best for vegetarian dishes which can be made just as easily on the stove without overcooking tender veggies. It is a great tool for slow simmering marinara, making beans from dry, homemade applesauce, and a few other vegetarian staples. I plan to make yogurt in it for another video this month. :)

I have a video idea Mindy! I would LOVE to learn about different slow cook meats, how to shop for them, how cook to them in the crockpot, and recipe ideas. I am a pretty experienced home cook but also a former vegetarian. Now I'm stuck on basic meats for family meal ideas - either sausage, chicken breast, chicken thighs, ground beef or turkey. I want to learn how to cook delicious (and maybe cheaper) cuts that you mentioned like pork shoulder, chuck roast etc. I am so intimidated by that area of the meat section in the grocery store! Looks delish! Wow a lot of dairy, block of cream cheese, milk & cream, cheese, & normally butter, I would probably use half those amounts and add in a little more chicken stock.
I have noticed the same with lots of American dishes, they all use lots of different dairy ingredients in the one dish, I’m in Australia and we would only use the two, cheese, can’t skip the cheese 😂 and probably anywhere between 1/4 cup to half a cup of cream and that’s it, we don’t tend to use cream cheese in many savoury dishes, we normally make cheesecakes with our cream cheese.
I watch alot of foodtube and ive noticed too that Americans are very heavy handed with dairy in their recipes! Granted this video is low carb so fats like dairy would be higher proportionally but it does seem like a lot from a uk/European perspective. The easiest example i think is lasagne, an Italian/European style lasagne is made with a white sauce vs American Italian lasagne uses ricotta & mascarpone and usually other cheeses in place of the white sauce. Considering a lot of Italian cuisine comes from the "poor kitchen" the American version is expensive financially as well as calories!

Oh my I have ingredients, except Parmesan garlic sauce, for all 3 recipes-have ground beef & herbed riced cauliflower thawing out in fridge & now can decide what to make. Also, have sausages thawing out in fridge! Chicken in freezer! WOW! Thank you. BTW, low carb/ keto miracle noodles( a little pricey), however, a nice change up from cauliflower rice, spaghetti squash, etc. Amazon has them.

Lower carb is what most of us probably need. Don't want duabeties and have been trying to do lower carb and meat. Any would be interesting to look at. Real keto includes some veggies that aren't bad.

That was what we did years ago when my husband was trying it out. These dishes were delicious, we'd eat them any time even though we don't follow that particular lifestyle.
@SeeMindyMom I'm actually dehydrating tomatos from the garden ( end of the season) for "marry me chicken" very similar to what you made today! I have alot of sauce put up already so why not dry some out ❤️ in life someone will always be cranky about something... I'll tell my girls all the time... Baskin Robbins has 31 flavors for a reason... we are all different...and like different things! Why get mad if you like vanilla and I like rocky road! Take the good...leave the rest! ❤️

How does Good Chop compare to Butcher Box?
We use chickpea pasta in our house. Orange box in the store.
Chickpeas are a carb. So for keto you can't eat many.
Anyone here have an idea how to get a similar flavour to rotel? I live in Austria (Canadian opera singer here...) and would love to find a way to match that flavour...(i think i could get some cans shipped...at 4-5 euros per can 😂)
It is just tomatoes and green chilis. You can try subbing salsa, or fresh tomatoes with chilis or peppers.
Rotel is just diced tomatoes and diced roasted Hatch green chilies. You can probably find Hatch green chili in cans, if not you could roast any green chili (I might sub poblano) and dice them, then mix with either fresh or canned diced tomato. Good luck!

But I grow my own jalapeñosAND habaneros in the summer. Maybe combining jalapenos is enough? I usually dry them, but maybe freezing some. I've never actually had rotel, but so many slow cooker recipes use it, so looking for an option here.
@@KristinaAgur Basically any pepper will do. Green chilis are a little hotter that Jalapens and habaneros so add a few more seeds to the diced tomatoes. You can grow green chili peppers too. You can "roast" a pepper over the stove flame on a fork.

Great! To define Keto(sis): the bodies metabolic process for changing food into fuel as opposed to the other metabolic process of Insulin conversioin of carbohydrates. Our keto meta burn fat to make keytone bodies for fuel. Our brains love Keytones whereas too much sugar will damage and kill brain and other cells. Our Keto meta will actually release the stored fuel that we carry as fat. It also releases Leptin our saiety hormone. Carb/insulin diets will actually through our metabolisms into disorder. Too many carbs=too much suger in blood=danger to brain= large releases of insulin to remove it from the blood=liver converting to fat=too low bld sugar=hunger hormone= cycle of eat>store>fat buildup, which is obesity. Then Insulin Resistance (metabolic disorder)= Type2 Diabetes (metabolic disorder)= Fatty Liver, Artery blockage, heart disease, strock, high BP.... In Ketosis our bodies are most prepared to go to thru the next two stages of complete Metabolism. Fasting which puts the body into Autophagy or Recycle and repair. This is when our body begins to "eat up" dead or damaged cells for the body to reuse parts or distroy. It will destroy some virus' and some cancers. I hear you that you don'y want to buy commercial keto products but, in all fairness aren't you buying commercial foods that trigger an Insulin response. The challange for ketosis is to get a finite number of calories from fat(high) a moderate amount from proteins and a very small amount from carbs. I eat 20 or less grams of carbs/day. The healthiest way to reverse Insulin Resistance to prevent T2D etc. is to stay in ketosis and give our cells a chance to resensitize to Insulin by resting the body from the insulin metabolism. PS the brain loves keto so much that it won't have seizures like it does with a carb based diet. Before pharmecutical treatment for seizure disorders, a keto diet was the best therapy and it still works. It's really wonderful to experience you body in ketosis - like no other thing you've experienced.

I noticed in the chicken Alfredo dish that you cream cheese said “Greek.” Is that cream cheese made from Greek yogurt?
It's the one I happened to have in my fridge at the time, but it will work with any cream cheese. I get that greek-style one at Walmart from time to time. It's higher in protein than traditional.

Definitely a sore spot for me is the higher carb recipes. It is really boring to just eat plain meat and veggies. You are 100% right that you just need to live without the starches but it's difficult to cook homestyle foods that way. Casseroles are really hard to make without a carb. It's getting to that season where you want to just dump everything in s crock pot or dish and I just can't anymore. Thanks for giving me a midweek boost.
These sausages are just to full of grease for me. I love the flavor but I have to take it out of the skin, break up and sauté, draining and blotting all the grease out that I can get out. The spices ones have so much flavor and since you are adding red pepper flakes why not give it a try?
What fat do you add to make it a keto meal? Olive oil?
