  • Today I after being given a fresh Atlantic Salomon I decided to use the whole fish and prepare a meal out of the heads! So follow along as I surprise my girlfriend with a meal of fish head soup when she was expecting a meal of duck!

    Nice to see fish soup being prepared. I am from Russia, and our fish soup is very common. There are many varieties of this soup made from different types of fish. I want to tell you how I usually make a simple soup from the head (or tail) of salmon. To do this, you must first remove the gills. If the gills remain, the soup will taste bitter. Then put the head of the fish in cold salted water and slowly bring to a boil. This produces foam. The foam must be removed so that the soup is transparent. When the water boils, add the onion. It is not necessary to chop the onion into small pieces. Place the onion, cut in half. Cook for 20 minutes. Then add some garlic and black pepper. Cook for another 5-10 minutes. The soup is ready. Such a soup - only made from fish and onions - is called "ukha" in Russian. Only broth is eaten, boiled onions are removed. You can add fish chunks to the soup 5-10 minutes before cooking is complete. This can be done, especially if you have several varieties of fish. It is necessary to cook broth from small and low-value fish, and add pieces of large and valuable fish at the end. So that small bony fish, for example, perches, ruffs, roach, do not contaminate the broth with bones and their fragments can be cooked wrapped in cheesecloth.

    Sometimes i think its the best tasting part of the fish plus fish eyes help me alot with my dry eyes .

    Some of my friends will argue that the cheek is the best meat on the whole fish. I must say that your fish head soup looks much more appetizing than the fish head soup that Zach of 'Fowler's Makery and Mischief' makes.

    The Soup looks great! My Wife is originally from Singapore and loves to eat Fish head Soup. Its very popular in Asia.
    We went deep sea fishing for Haddock & Cod a few years ago. At the end of the trip they hastily filleted the fish and wasted a ton of fish. In particular they were throwing back giant Cod heads, with lots of meat on them.
    I wonder why we in the west are so finicky. I am sure a few generations ago people did'nt waste fish heads.

    My X mother in-law was poor as a child. She said that when the rich people came in the summer none eat lobsters that people had the mind set these were trash and not fit for eating. This was a long time ago and how things change. When we hunted or fishing we eat every thing of that animal nothing was wasted.

    Two dishes come to mind. One from the south a 🇫🇷 France, Classic French Bouillabaisse , a fish soup. And Haggis from 🏴󠁧󠁢󠁳󠁣󠁴󠁿 . Both use bits of sheep and fish we usually miss out on. I wonder if you can make a good gulash fron Maine meat ?

      @@MainelyOutDoors I been using every part of fish since the 80s, lot my navy buds were married to filipinos , nothing went to waste except guts and scales! They wanted my left over live sardines!
      We just went out, 30 sea bass and vermilions. I smoke/fry them whole so we get all that head meat!
      I have huge chunk of 70lb pacific grouper I will trade you for that bad ass salmon you get! Come on down to coastal NC! haha!

    Nice. Next time you might want to put the racks in with the heads. The bones will add more flavor to the broth, & the meat will fall of the bones.

      @@MainelyOutDoors An equally good use. I haven’t tried it with salmon, but if you want to push on using the whole fish, the fins & skin of some fish fried in tempura batter are quite good. They were served like potato chips at a seafood restaurant. I confess not trying it at home though.

    So I caught a trout yesterday. I’m attempting a fish head soup today. Then I got the end and I was like… I’m I supposed to eat or discard the head after cooking…? I’ve eaten cheek meat before but fish head soup is totally new and I’m a bit confused at the table…

    Cooking fish heads is not a trend my grandmother made fish head soup many times I have done the same for years I am 71 now my daughter does the same my great grandmother did the same as her mother did. Salt water fish make better soup.
