About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on TH-cam.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

In the eastern part of India and in Bangladesh, fish head with lentil( daal) soup is a great-tasting dish, enjoyed with rice.
Fish head can be used in a cabbage and potato curry, enhancing the flavour.
Adding garam masala and bit of ghee is a must.
It's always nice or preferred to use every bit of the seafood, fish or meat as possible
white people just making fillets from fish, is always stupid to me.

I like salmon heads and this dish looks amazing. I should try this recipe. The only thing is I would have done a cornstarch slurry to thicken up that sauce.
I have been cooking salmon head for years and only 2 different recipes ( salmon soup and grilled). I still have 1 head in the freezer and definitely will try this now .

Why not peanut oil?
The head should be marinated with cooking wine and black peper ,salt for a while to create the basic flavor ,That's the way how I cook it
