I don't understand why people are getting touchy about the camera man joking with Hiroyuki about him having OCD. He is friends with Hiroyuki and has the right to joke around with him and whether Hiroyuki took offense or not is between them. I didn't detect any malice in the joke. I made this last night and again today. I will never make miso again without organizing each ingredient this way. My family went nuts. Best chef on yt.

When you cook for someone you are giving them the best your hands have to offer. Your workspace cannot be cluttered or you might mentally bring that disorganization to the person you are serving, (it is said that bad spirits like disorganization). Cooking with your hands you give nourishment to that person, good things for the soul to wish that person happy. You can see that in Mr Hiro’s work. His teacher must of been a great person.

Also, it's just simply pleasing to the eye, and everything looks clean and like a work of art...just like his kitchen...I want to cook in that kitchen!
Agree, this is not OCD, I have seen hotpots in Japan everywhere and they all looked like this, very nice presented and arranged for the eye. Also having a clean kitchen is normal, a messy one is the issue!

Hi there Hiro, nice job. I really enjoy your cooking classes. You should do more recipes from your childhood? The collar has so much meat on it. Don't throw away the head. Or collar of the fish. Try them. Don't be scared people. Especially in these times now. "NO WASTE!!"
That's is soooo yummylicious Mizo soup and love it. That's the Japanese culture . They're Organized ,systematic and clean. I love Japan. Try to visit Japan and find out for yourself.
Hiro I made the nabe tonight and it was super oishii! I had most of the ingredients already including Trader Joe's salmon. I only ran down the street to buy daikon and shimeji. I don't shinguku so I just placed an extra bunch of negi on top. No substitute dry chinese shitake for fresh. I didn't use enough bonito and kombu but next time I will use more. I had Yukon gold potatoes sitting around I this I'm sure taste better than russets you used. The potatoes were the tastiest thing in the pot as it absorbs all the flavor of everything else. I didn't have salmon head but I'm sure if I did it would taste even better. Lastly I didn't have any cold beer to go with it. Next time I will. This was an excellent dish and easy to make. Your vegetable stacking technique made it easy to arrange and looked great. I had previously struggled to make my own nabe in the past but now I have learned a little bit more. Thank you Hiro!
Thank you for watching and making at home too! salmon head has many great parts so the taste and the meat is more fatty, not so dry like regular salmon meat, but you can get some belly and wow, maybe even better! Sounds like you didn't have tofu but make to to add also...so good :)
On a cold day, that soup would sure hit the spot. Very nutritional and so full of good flavours. I hope you and your cameraman have a good afternoon and a great week. Cheers, Chef Hiro.
