Can confirm, the worlds (especially the USA one) seemed huge at the time. There were quite a few secrets to see in each map, and I think there were hidden stars or something as well (it's probably been 20+ years, don't remember that well). Thanks for the great retrospective!
Pilotwings 64 is less a game and more a tech demo for the power of N64. I remember renting this game at the time and being in awe of the graphics and large open 3D spaces you could explore. I had more fun just flying around taking in the sights than I ever did playing the missions. And the music is very relaxing and adds to that sense of wonder. Yeah, the world of Pilotwings 64 feels quaint, tiny, and graphically-laughable by today's standards, but for kids in 1996, it provided that wow factor so you could show off your new game console to your friends.
