In Hokkien, it's Char Bee Hoon. I asked my mom to show me her technique for this dish years ago, so I could enjoy it and share it with my own family. After making it hundreds of times, I still can't quite capture that secret something... :-)
I’ve also made adjustments in the kitchen due to sore joints, arthritis etc. My ricer particularly, I chose a horizontal action because the vertical squeezing motion was impossible. I’ve started using the mallet for garlic also! Love your style Flo ❤
Last part of the cooking, add beans sprout. Stir fried awhile and serve. A good beehon don't put sesame oil. Ruin the taste. Beginning stir fried garlic mince to get the fragrant oil. Vegetables (Choy sum). Color wise, add more dark soy sauce to get a darker brown color. Seasoning 2-3 servings: Oyster Sauce 1-2 Tbsp, Sugar 1Tbsp, Light Soy Sauce 3-4Tbsp. Beehoon Color: After soak beehoon, I add dark soy sauce (sufficient) and mix the beehoon well coloured evenly. While cooking, don't need to blend the dark soy sauce.
The Philippine Hokkien version (cha bi hun) is very similar. My mom uses stewed canned pork chops (Narcissus brand or Gulong), and julienned carrots on top of everything you made. The egg is typical pan fried into a thin sheet that can be slivered and topped on the bi hun. In my childhood I used to eat this with ketchup, and now I prefer to eat it with tabasco sauce. Cheers

You can try using bok choy, spinach or bean sprouts but don’t cook them too long before adding the noodles as they can release a lot of liquid and you don’t want soggy noodles.

They all have so many different noodle dishes and every cook/family has their own versions. It’s really hard to say. 🤔 But you could add a bit of curry paste or powder to the recipe to experiment. Keep in mind all curries are different too.
