In this video, I started out with one of the best hand-rolled noodles in the Muslim quarter. The beef noodle soup was flavorful, meat was tender, and the noodle had a very nice chew to it.
Next I tried something very special. I've only seen it in Xi'an. And that's 滷汁涼粉, green bean jelly noodle with thick sauce and covered in mustard and sesame paste. There were also hard boiled egg and century egg in it. Of course I added a 膜 (pita), just to eat like the locals.
I then tasted the most popular mung bean cake shop in Xian. Tiny shop but the line was super long and the cake/pastry was outstanding.
After getting my sweet tooth fixed, I went for a ncie hot bowl of jelly noodle and mutton blood soup. Really flavorful and the texture was really something special. I really like it.
I finish the day with smoked pig ears, intestines, and stomach. All of the items got a very pungent smoky flavor to it. Savory and smoky. Really phenomenal smoked meat.

This lady at the start creating her own noodles, is clearly a master at the craft. Its amazing how a simple woman can be full of skill to do something so extraordinary. I thought the noodles were mass produced, but she cuts them individually!!

It's not salty at all. It's got a very special flavor, sometimes it could be a bit stimulating when eat it cold
DS Travel hello, since in this video you did not describe, what exactly does a century egg taste like?? A fermented egg tastes like what? Sorry to ask, i just want to know
no problem, let me try...the texture of egg white is like a firm jelly, egg yolk is like a soft cooked egg. flavor wise, sometimes there could be a bit of the amonia smell/taste, slightly bitter, and some say it's kinda like a ripe Camembert. But it's really hard to describe. You'd have to try it a really experience it.
