    Hi Amy, I’ve lived in the US my whole life and I am Chinese, and I visit my grandparents in china every summer. Im almost fluent in speaking mandarin and I understand a lot but I’m illiterate and still have a hard time communicating with the Chinese people and honestly am scared. For example ordering something because I can’t read it... Your videos really connect me with China and my roots and they make me a little less scared. I love China and watching your videos so much, thank you ❤🙂

      I'm more or less illiterate, too, but I'm going to do a 2 week trip to China soon. I think if you can speak you're in good shape. In Europe I got by with English and hang gestures.

      The menu in most of the restaurant has photo behind the word so it doesn't matter to order some food, or you can ask the server help you to order the signature dish.As you are almost fluent in speaking mandarin, you are better than most of the foreign friend, so don't be scared and welcome to travel in China.

    I love your positive attitude and respect towards foods that you personally don't like very much (the last one) but still maintained that professionalism and reminded the viewers that they should try it for themselves since it was an acquired taste to you but others might fall in love with it.
    Indeed, this is the challenge of food vlogging as it is impossible that everyone would like a particular dish equally (or at all) and so, I feel that food vloggers should introduce the viewers to the foods, give fair assessments and facts and leave it to the viewers to decide for themselves if they even want to try it.

    Growing up I always hated the gravy jelly noodle (麻酱凉粉). The sesame sauce is so overpowering that you cannot taste much else. A friend of mine loved it though and used to argue with me non stop. Since he was small in statue I started to call him "little sesame" (碎芝麻) and the moniker caught on among our friends. Good times.

      Ads always feel forced. Maybe Amy genuinely enjoys the camera, but the cumulative runtime spent on talking about the camera was definitely too long. It felt like watching a camera ad with some Xian food footage in between.

      @@toms169 The fact is: Amy's inclusion of sponsored content happens roughly once every seven or eight episodes, a frequency low enough to maintain a viewer-friendly experience. To support a favorite vlogger, especially when most mainstream media outlets are biased against China, Amy's objective and fair portrayal of real China on TH-cam is truly commendable. It's not easy for a TH-camr like Amy to maintain such objectivity and fairness. I can accept her including one sponsored episode in every video.

    That gravy jelly noodle is too controversial even not too many locals dare to try or like it😂
    The additional point to the RouJiaMo is that there is a variety of beef/pork fillings they do, such as preserved beef, braised beef and etc, and it could also come with different breads.
    The secret of Xian food is about carbs of different shapes with different toppings and fillings.

    Century eggs in Southern China Guangzhou is chopped in one centimetre piece's and mixed with congee. That's how I've grown up eating it.

      Yes, that's a good introductory way of eating it, in tiny savoury morsels. That's how I got to slowly like it too.

    I owe you a thanks - mostly unrelated to this video but in recent travels I ended up in chinatown in melbourne for breakfast and was able to put together that "chinese crepe" stall was selling jianbing. I convinced my partner to share one with me and he was almost more impressed with the youtiao ("chinese dough stick") than the jianbing put together

      If you are Muslim pls spread it to your bro and sis that China is the most friendly place to Muslims, almost all universities and high schools if there are a canteen there must be a part dedicated to halal food, it is also mandatory if they wanna get government funding. Also there are tuition fee reduction and also the most competitive college entrance exam in China, if you are a minor ethnicity group (Muslim mostly Hui group) you get benefit as in lower bar to get into a college. Like where else in a world can minority groups get this treatment???

    Century eggs needed to be consume alongside the congee or porridge. That's how a century egg should be consume, the southern chinese did it so well i've been craving a really good one after my travel to Guangdong.

    Chinese breakfast food. (皮蛋瘦肉粥) Try the Chinese Porridge Century Egg and Pork Congee. "You can add a few dash of white pepper with the congee". And pair with the Fried Dough Sticks Youtiao.

    Hi Amy, I've been following your channel for a few years now. Really enjoy your content. I've got to say as someone who grew up in China, you might not be eating the century egg in a correct way. I don't think you can ever eat your century egg in one gulp. That would be too much, even for a Chinese. I can't do it myself. I would probably recommend tasting it bits by bits, dipping the century egg bits in a soy sauce and vinegar dipping sauce, it would be quite tasty and umami, just like the flavour that you would always like it. Also, eating century egg bits in congee would be very lovely as well, again, the umami flavour would be bursted into the congee itself.

    Amy, pour vinegar, soy source plus sesame oil over a cut century egg (I would cut it in 4 to 6 pieces) and always have some pickled young ginger thinly sliced on the side. Then tell if you really like it or not. 😊

    as a second gen xi’an immigrant living in nz rn, i LOVE xi’an food. noodles are my fav food in the entire world. i only wish my parents taught me the shangxi dialect so i can feel like a proper xi’an kid lol

    XIAN as the Last MAIN cities for the Ancient Silk Road has many Traders from many parts of the World. Arab, Indians, venetians, etc. Islam has roots from Arab nations, And many settle along the ancient Route. Xian is famous for the Muslim "Lia meng" with Beef. In fact many Muslim Food stall is know for their Beef Noodles.

    i would 100% stir and mix that last dish. always cut century egg to small pieces and mix them instead of eating them whole, i just think them as sauce instead of normal egg, cause it change the whole taste of any food. just like eating porridge century egg. cut them small mix them its a flavour bomb

    The best dish to try that egg is in dongbei, it’s called pi dan dou fu “皮蛋豆腐”, it’s a savoury cold entree dish. Very delicious 🤤

    Its a funny thing with Pi Dan. I grew up completely Western and very rarely had access to century egg. Still ended up loving it especially in Congee.

    Amy, Century Eggs eaten by itself can tend to be a bit too "strong" (pungent?) especially when taken in large bites. These eggs are definitely not eaten the same way as ordinary hard boiled hens eggs! However, when having a tiny bit with say, congee and a tiny dash of soy sauce, it's more enjoyable. It's a bit like some foreigner to Australia trying our world famous Vegemite and lashes too much on their bread as though it is a jam or marmalade. Much better in small, tiny servings just like those small salted and sun dried herrings you see more of around South East Asian countries (and possibly in Southern China near the Vietnamese border).
    My mother from Shanghai (she's passed on now many years ago) used to make a dish out of several different types of eggs mixed together (slowly) that incorporates century egg which is then steamed into a "cake'. When done, it is cooled and then thinly sliced into lovely shades of yellow, white and brown/black layers. Great accompaniment with steamed white rice or congee - and even sometimes, just eaten on their own.

    I think century egg is best combine with bland food like congee or tofu to balance out the strong flavor, add some soy sauce to bring it together.

    If I remember correctly the century egg isn't a boiled egg. Its just a preserved egg, they take a raw egg be it chicken, duck or what ever and place it this mixture for weeks to months and it just changes to what you see there. That reminds me, I need to pick a pack of them up. They go great with rice porridge. Yeah it's not for everyone and even people who like it, have it in small dosage. The flavors are quite strong.

    "I'm just not the biggest fan of biled egg in general". Century eggs are not boiled. They were covered in some kind of clay until they are ready. No boiling involved.

    Century egg really is an acquired taste... I basically only like it in rice porridge with minced pork.
    Xian food looks interesting - love that its got such a big selection of halal foods! Curious if the sour spicy(?) dumpling soup was similar to Tom yum soup?
    Lastly, I'm surprised that the strange food didn't soak up the sauce more like you mentioned, since I feel like chilli oil tends to be absorbed fast... Is the bread similar to the roujiamo texture or is it denser? 🤔
