You can use thick acrylic to make the jigs, they're very flat but expensive, you could also flatten down the 3/4 inch MDF with a surface planer from Home Depot.
Just viewed your video from South Africa. We use MDF for a variety of signage that we manufacture. Spraying a standard wood sealer on your jig after cutting it out should stop a lot of the warping. We've also started using Architectural Foam Board. Nice outdoor material that comes in various thicknesses.

We want to buy a small UV flatbed for printing on pvc cards (access cards, name tags for events etc) but as we already have two Roland wide format printers the temptation is to go with a Roland LEF2 200 as opposed to the UJF3042MK2E to keep things all Roland and because its a bit bigger and a bit cheaper. The problem is that it looks like the Mimaki is newer tech and maybe a faster and better printer. Can you please offer any advice? Thank you.

We use ShipStation. It pulls in all our orders from Shopify, Etsy, Amazon, eBay. We can also create orders/shipments manually. If you use UPS by ShipStation you get really really good discounts.

The material we used was 3/4" UHMW which is pretty pricey ($150 just for a 2'x2' piece). I think if we did it out of 3/4 MDF it would work just as good. We could do the MDF jig for $150 each if you're interested, free shipping in continental US.

It depends on what you're printing on. I wouldn't guarantee quality/durability on anything until I test print. There are primers that can help with adhesion but it's a test and try type thing.

Materials that work best for a jig? Acrylic, hands down! 6mm's decent but you can do 12mm too for items that need more support.

Yes that's what it is. We bought it with the machine so I have absolutely no idea if it works or not.
I use aluminum for our jigs. They are expensive but last a lifetime and easy to clean, perfectly flat
We've used them in the past, 1/4" cast aluminum jig plates from midwest steel and aluminum.
