in most restaurants the cost of ingredients is usually 20-30% of the menu price. The remainder goes to rent, staff wages, overheads etc.

It’s a clear cut above McD or MosB standards-wise. Onions and Pickles can be added for free (which I do whenever I go to SS). And it’s about the only smashed burger place in SG.

so i guess burger labo is the best you’ve tried? they recently changed their buns to potato buns which imo is really sad because i feel like their old buns had way better structure. didn’t quite like it as much when i went to try recently after new buns
I'll compare all of them in the next ep. but yeah burgerlabo is definitely up there. oh was the potato buns recent? I tried to find the original shake shack recipe but I couldn't find anything.
@@Alderic. ahh no i mean that for burger labo, they used to get buns from bakery brera but now they changed to burger buns which imo really downgraded the burger for me because it lacked the structural integrity

Look, I can understand your sentiment - I also don’t like processed cheese.
On the other hand Shake Shack is an American icon. It doesn’t want to be a steak burger or gourmet burger,
The processed cheese is one of the most important “facets” of this consideration. Go to any American burger review (or cooking show) and they will put into your face, that processed cheese is the way to go.
I am failing to understand, why major burger joints like Shake Shack don’t make their own processed cheese… but it is what it is - they probably argue why fixing a thing which is not broken…
I dislike furthermore totally your “math”. There are a ton of considerations. Shake Shack is using far better beef than other joints. And probably they are also located in a decent location, plus their consistency is better (more training).
And of course - it is business. It is a franchise - not a mom & pop’ restaurant. When it comes to price consideration, you cannot argue - you can say just: it is worth it (personally for you) or it isn’t.
oh what did you not like about the video? it seems like you agree with me about most of my points haha.
Shake Shack is great. I don't think I downplayed any of their merits. I even have the same idea as you about rating, that's why I qualify my personal ratings with what I would do for the burger.
American cheese is the way to go! None of that aged, blue, sharp kind. They have their own place in the culinary multiverse.
