    And the stall is nestled in good ol' Chomp Chomp, home to many other great dishes.
    You want authentic? You want traditional? It doesn't get any more authentic or traditional than this.
    Although, maybe sometimes, authenticity and tradition can be a little over-rated in the culinary world.

    Brutally honest, very well done. Like that you stuck to your guns and rated it based on YOUR idea of what a good hokkien mee is. Popular doesnt always means best.
    Expecting to see more big names pop up in this series and see how they fare 🤩

    I think you probably tasted how Hokkien Mee taste back in the old days, where seafood and lards still more like a luxury ingredients to have.

  • @QDPenguin
    @QDPenguin ปีที่แล้ว +17

    I think it's possible that the very original fried hokkien mee is very close to a tze char mee goreng. Back in the old days, it's all about the egg and fry (household bring their egg over to the hawker ) and possibly less emphasis on the seafood/meat richness(less affordable).

    Absolutely 💯% correct fair n honest rating to this stall

  • @wanzicheng
    @wanzicheng หลายเดือนก่อน

    The description you gave for this noodles matches the one produced by the stall/restaurant that used to be owned by the late Rolex Hokkien Mee in Bedok, who claims to be still cooking up the taste from the 60s. But really, it tastes like mee goreng without the chilli. The mee goreng they serve there, ironically, tastes like hokkien mee fried with malay nasi lemak sambal.

    I feel like you can expand your review rating range. Like 0 noodles for I wouldn't even walk for the noodles, 4 noodles for you should fly here from SEA to eat this noodle, 5 noodles for you should fly here from anywhere in the world to eat this noodle.

    • @Alderic.

      there is the zero rating although I very very rarely give that. maybe I'll keep the 4 noodles rating for the awards episode! I highly doubt that any noodles dish can live up to the 5 noodles rating haha.

    I love hokkien mee but when I visit singapore, I have been very lazy when it comes to looking for good food (medical visit). I just eat what's near my place of stay. At about 5 different areas I've stayed the past 7-8 years, I don't remember finding a hokkien mee stall that had lard.
    Also, the underground food court at aeon, I understand that place is not exactly a place for 'good' food , more of a tourist trap if anything..(everything is expensive but the hokkien mee/kway teau stall is especially so). Does that one have lard? I don't think it did.

    • @Alderic.
      @Alderic.  ปีที่แล้ว +1

      I wanna say most hokkien mees do come with lard but now after visiting the original one, I'm not that sure anymore.

  • @liklengtay2498
    @liklengtay2498 ปีที่แล้ว +2

    I personally tried it before, literally like a MSG fried noodles... I went thirsty crazily throughout the whole night after that plate. Its a nightmare... No pork and no lard which is very true. Not worth the wait even for 10mins, there are more better ones out there. Very honest and well done review!!!

  • @MomentArchives

    on other note, I also agreed with your verdict.. the real chef is the old uncle not his son or other. due to his old age and strength, the standards is not as good as it used to be 30 years ago.

  • @bottledtyler
    @bottledtyler ปีที่แล้ว +2

    Kinda suprised that this place didn't fair well in terms of seafood flavour since dry versions are supposed to soak it up, begs the question about their broth. That aside, so cute that the ABC uncle carried your views😆

    Ho huat fried hokkien prawn mee at boon lay place is also very good. For the 10 dollars portion you have about 5 medium large prawns (cut open with the digestive system removed, i personally like the cleaner taste) and generous lard if u ask for it. The seafood broth is also very good

    I don't know if this theory makes sense or not......
    Back then, it was "purity" and "simplicity" of the dish, a promise of no frills good food at an affordable price (so to speak).. There wasn't any crazy competition and a myriad of reviews, media coverage and Michelin guide /stars.....heck, like you mentioned, even they have to compete with really expensive broth maxed infused noodles and a young boy already cooking up a bad boy dish.. I think it's a evolution we are seeing? Who knows what's next.. Maybe Tiger prawns as a minimum, and a whole load of seafood with free flow lard as a de facto?
    These days I realise that the term 'wok hei' literally dominates or rather , becomes the focus of a good hawker dish? Everything is hyper elevated and "innovated " to stand out from the crowd.
    I mean..just look at the venerated fried chicken.. That simple dish is pretty much eclipsed by the arrival of the Korean variants so much so that it's almost like a "benchmark"... I am not saying that local ones are not good.. But because the Korean ones exist, one tends to compare that with the others.

    • @jonathanchia9167
      @jonathanchia9167 ปีที่แล้ว

      if it was really that simple and plain.. what makes this better than the KL version which is suppose to the original Hokkien mee. The fact that we singaporeans hold this hokkien mee as the standard instead of the black version should be indication that it isnt suppose to taste that simple.

    • @tobychye6582
      @tobychye6582 ปีที่แล้ว

      @@jonathanchia9167 personally I think the black version is the black version, if that makes sense? It's a totally different dish. I think, in a sense, the black one was already very flavorful to begin with? I am not sure how it has evolved through the years? Perhaps in a similar vein with the Singaporean white version?

    • @Alderic.
      @Alderic.  ปีที่แล้ว +1

      very possibly. back then, hawkers cook as a way of living and to feed others. now, people look to earn more and impress. obviously not speaking for everyone but the sentiment of being a hawker is different now which is totally fine.

    My family used to be one of the regulars, but during Covid period and everyone was wfh, even regulars had to wait after calling to pre-order. It’s the peanut scent, complex seafood taste and the wok hei that’s the draw. We also did noted that standard has dropped these couple of years
