Barilla pasta company makes a lentil high protein pasta noodle in angel hair and spaghetti shapes. Nice thing about this is that it doesn't get mushy if you use it in a pasta salad, which this is. and you get that protein needed.

at my house we have a rule if i cook you clean meaning if me or my husband cook a meal to eat together the other should clean up after we eat but obviously if i make a pbj for just myself ill clean up lol

My husband is not convinced on cold noodles
Don't tell him this is a kind of cold noodles, instead, call it Korean pasta salad. Then he will give it a shot! Once he has a bite, he will be convinced. 🤣

You can also add 1-2 tbsp of a neutral oil (like canola) to the noodle water to prevent it from overboiling without slowing down the cooking. It also helps keeps the noodles from sticking later. Works for all types of boiled noodles. Fresh shanghai noodles are particularly vulnerable to frothing.
You need some starch for the sauce to stick... You can't rinse off ALL starch (even if you tried.) Adding oil just makes them slippery and will pick up less of the sauce. However, it's an okay cheat if you want to serve a lot of people 20-100+ very quickly but it won't be as good (less sauce and slippery noodles.) A better way to serve A LOT of people quickly, would be to to par-cook the noodles to about 90% and rinse, quick dip in boiling water and proceed as you normally would before serving.
Canola and all seed oil is toxic.
Don't add oil to cooking pasta. Sauces won't stick to the noodles!
This is a myth. I haven't seen these problems at all. You're not drenching the noodles in oil people. Its a couple of tablespoons in a large pot of water, and the vast majority of it goes down the drain anyway. Please think for yourself and don't perpetuate myths...

You know what? Kikkoman teriyaki sauce is sweet enough I think it might be able to replace the mirin and sugar in this dish... the idea of using sesame oil as a replacement for this "perilla" also sounds great. Now I just need to find some sesame seeds and a bag of spring mix... :)
You could, but kikkoman teriyaki sauce does not taste anywhere near the same as soy+mirin. You'd be better probably to use a sweetener straight into soy with maybe a bit of water
