    Hi Mrs Lin - thank you so much for sharing this wonderful recipe. I will make this soon and I am very happy to eat and enjoy potstickers again. I didn’t eat potstickers for a long time because of the non gluten free wrapper. Someone should start selling gluten free wonton, potstickers, and egg rolls wrappers. I’m sure a lot of people are going to be very happy.

      I can totally relate. I haven't have potstickers, gyoza, dumpling or wonton for a long time, too. And all the store bought frozen potstickers were not good until I tried making it myself.     Can't thank you enough for this wonderful recipe which my family and i enjoyed tonite.
    This type of dumpling (gyoza as we call them) have been off the menu since my son was diagnosed coeliac.

      @@chien-liross1545 Gluten free potstickers freeze well. I usually make more and freeze them so I can enjoy them at a later time. Also you can make the filling ahead to save you sometime later. Then just make the dough before you are ready to wrap them. I also have a mini assembly line at home. One person make the dough and roll them into wrappers, and another person put the filling and seal the wrapper. Hope that helps.

      I think you can but make sure the openings are sealed very tightly. Otherwise, it will fall apart during cooking in the soup. I steam the potstickers most of the time.

      Traditionally seasonings are not added because you will be eating with sauce you made which is the combination of soy sauce, sesame oil, chili sauce. You can also add chopped garlic, cilandtro and black vinegar for more flavor.

      Yes, absolutely. The only difference would be the size, shape and fillings.

    Will the wrappers work for spring rolls or wonton soup?

      Hi Clark, Thanks for watching my video. I am hesitate to use this wrapper in the wonton soup because it doesn't have enough tapioca flour to hold the wrapper together in the soup. Although I have never tried making spring roll with this wrapper but I think it should be fine because you will be frying it. If you try it, please let me know the result. I am interested, too.

      Gracious!! Rice and tapioca flour as well as potato starch are all gluten free. So, Yes, the final result is gluten free.

    Can I make these and freeze them before cooking? How does that change the cooking time? I’m wanting to make these for a party!

      Yes, you can make and freeze them. I always make a few batches then freeze some for future. When I am busy, this is easy food to prepare. You just place the frozen potstickers in the pan and fry them same way as if they are made fresh. Still very delicious!! Hope that helps.

    Can you use more tapioca if you don't have potato?

      Pototo flour is used as an adhesive that will hold everything together so you can try using corn starch instead. You can up the amount of tapioca as well. Basically try playing with these two flours and keep the amount/ratio of rice flour the same. Also remember to mix those flours well before pouring that hot water. Hope that helps.

      This recipe makes 10 gyoza. You can always double or triple the recipes if you want more gyoza made. You can always freeze them to enjoy at later date. Of course freshly made still tastes the best. Thanks for watching. Enjoy!

      Since there's no gluten to hold all the ingredients tightly together, boiling them will for sure fall apart. You can, however, try cooking with less water or steam them. The end result will be very close. Are you trying to make "Siu Giau"?

      @@feathersmcgraw4650 Tapioca flour actually has the property that's very close to gluten. However, if you cannot eat this flour, simply use more potato flour instead. Use hot water still to activiate the ingredient property in the potato flour. Tapioca flour helps bonding the flours. Since it is omitted here, you will see that the dough will tend to break up more easily. Just work slower and make sure the dough is moist to prevent it from cracking. Hope that helps.       Rice flour alone is not flexible enough and will break easily. Tapioca flour alone will be too chewy. So the right ratio of the two flours is just right.

    Interesting recipe! I'd like to ask something. Seitan, or miàn jīn, is very trendy on social media right now, and is proposed as a meat substitute. I have never seen it in Japan, and I wonder if you possibly know any typical Asian dishes that use this ingredient. Maybe interesting content for a video?

      Seitan or Mian Jin is made of wheat gluten so not recommended for people who already has gluten allergy. Mian Jin is a popular meat substitute for vegetarian in Taiwan. Many Taiwanese vegetarian use it in their dishes. Basically use Mian Jin instead of meat for any dishes that you cook. You can use Mian Jin to make Sweet and Sour, Stir Fry or Stew dishes.

      You are referring to wonton which you need to boil in water, right? I don't recommend this recipe for gluten free wonton BUT I will be making the gluten free dumpling and wonton in the near future. Please stay tune.
