  • Here is my recipe for Charro Beans, easy to make it just takes some time. This can be done in slow cooker if you prefer, just put on low for approx 6 hrs.

    Charro Beans
    Ingredients:
    2 lbs dry pinto beans (uncooked)
    1 pk bacon ( your choice)
    1 medium onion chopped
    3 small tomatoes chopped
    1 large jalapeno chopped
    4 cloves garlic chopped
    1 bunch cilantro chopped
    salt, pepper, and cumin to taste
    Instructions:
    First sort out the beans making sure to remove any halves or broken bits of beans and any rocks or residue. Rinse the beans in a colander at least 3 times to make sure they are clean. In a large pot add 6 cups of water and add beans. Salt the beans with about 2 tsp of salt and turn heat on to high. Bring to a boil. As soon as it boils add chopped bacon and allow this to boil for about 20 minutes as you watch over it. Add water as needed always keeping level of water above the beans. At 20 or 30 minutes you will drop the heat to a low heat. On a scale of 1 to 10..keep the heat at about 3.. this is not a simmer but a low to med heat. You may keep at a simmer but it will take longer to cook beans. Once you have at lower temp cover your beans and check them every 20 to 30 minutes to check water level and stir them around. You will do this for 2 hrs of the total 3 hrs cooking time or rather after first 30 minutes..cook for 1 1/2 hrs. Add the chopped garlic, onions, tomatoe, and jalapeno at the last hour mark. Add pepper and cumin to taste. Stir it in well and add water if needed. Cover and cook 30 minutes more.. keep eye on it! For the last 30 minutes add the cilantro, stir it in and give the broth a taste. The beans should be tender and mashable between your fingers. Add salt, pepper, and or cumin if needed to taste. Finish cooking last 30 minutes. The beans and veggies should all be tender and the water should look thickened and color of beans. Your Charro beans are now ready to enjoy!

We just moved to San Antonio and I picked up food from a Mexican restaurant near our new home, I had this soup but had no idea what it was so I searched “Mexican bean and pork soup” and found your video.     Whenever I buy tortilla chips. You get to the bottom and have all those little pcs. I save all of those. So when I may a big pot of charro beans. Pour me a bowl and sprinkle some of those crunchy pcs across the top! Mmm.... mmm!

    Your charro beans looked delicious! Just wanted to add that I’ve seen other videos where they say not to add salt into the beans in the beginning until towards the end of the beans cooking. Mainly because it’ll dry them up and absorb all the liquid and moisture of the beans. But you did an awesome job keeping the beans saturated in liquid the whole time. 👏🏻🥰

    Update:
    So I make this all the time- I double the ingredients and usually make it after we make a ham - so Christmas & Easter and I do the 2lbs of beans bags. It’s so delicious and everyone loves it! Thank for the recipe.
    We freeze the left overs and have it year round with fresh tortillas queso fresco & also with fajitas

    Love this, but instead of all that water I use 2 cups and 3 cups of stock, I also add chrorizo and the bacon...so nice.

    I love cilantro and it drives me nuts when people don't use the stem. Lol Now with parsley you can not use stems, bitter.

    Years ago when I was into health food I read somewhere that if you sprout the beans for a few days it increases the vitamin content tremendously. I just laid them out on a baking dish and kept them damp for a couple of days. You don't want to let them sprout too much because they look like little maggots in the beans, although you know they aren't.

    Awesome recipe!!! You are right about keeping alert when cooking beans (I’ve scorched my share 🤦🏾‍♀️). Just a tip... I keep a kettle of hot water on the stove to add to the beans so they don’t lose the boil. Beautiful kitchen you have, I collect Temptations cookware as well.

    Oh man. That is such a wonderful generous amount of cilantro. Too many people are timid with cilantro. If you are unfortunate enough to have the gene that doesn't allow you to taste that beautiful flavor, I'm sorry. But that leaves more for the rest of us!
    I think I'd probably saute all the veg with the bacon and put that in together to add another layer of flavor goodness from the maillard reaction. But this recipe looks delicious!

    Doesn't matter how you cook you're ranchero beans it taste is good just use this ingredients , I myself don't use any pork and believe me the taste is so good just the same thanks Texas cooking lady 👍🏽

    A cookie sheet works well to sort beans. I will have to try the no soak method. I was taught to soak .

      thanks for the cookie sheet tip! if soaking works for you then keep doing it. I dont' know why my family has only rinsed them and not soaked but i suggest you do how you always have. :)
