Love this one so much!!!! Here’s my writing of ingredients & instructions. I may have missed things so anyone feel free to edit/correct it ☺️
    4-8 cups water
    1 Tbs of OG
    3 in of charizzo
    1 hotdog
    Bacon
    1/2 onion
    1 whole tomato
    1 whole Serrano
    1 whole jalapeño
    1/4 cup of tomato sauce
    1 Tbs of butter
First place bag of pinto beans (smaller one) in pot of 4 cups water (after rinsing beans thoroughly) bring to boil them simmer low covered
    Add 1 Tbs OG
Cut bacon, hotdog and charizzo in separate frying pan with onion; prep Serrano by poking a couple of holes
Cut tomato, poke hole in jalapeño; 2-3 cloves garlic
Stir and brown bacon a bit prior to adding charizzo and hotdog. Add onion. Add garlic once onions are done along with Serrano pepper. Add tomato and let sit on low while beans cook.
Cook beans for hr and a half, checking for need for more water, before adding bacon veggie mix plus jalapeño, 1 Tbs butter and 1/4 cup tomato sauce
Add cilantro and cook for 15-20 min.
Cool with lid for at least 30 min for total of 2 and a half hours. Add salt or OG maybe 1 tsp, if tastes necessary. Cool 15 more min if needed

Linda Baughman I’m assuming it was 2 cups because there’s a part towards the beginning of the video where he says 8 cups of water to 2 cups of beans with a tablespoon of OG. Since he only adds 1 tablespoon of OG in this video I’d say it’s safe to assume he used 2 cups. I could be mistaken though but I’m gonna make this today and use 2 cups. The part in the video is at 1:25. Oh and the beans are pinto beans.

One more thing. You didn’t include the salt pork. I just made this for dinner tonight and I added 4 strips of salt pork with 3 strips of bacon. Your breakdown of the video was spot on April! This was all I saw that you missed. Other than that it was perfection! They were yummy and delicious! If you can’t find the salt pork that’s already sliced like I couldn’t…I cut the slices about 1/8 inch thick and diced them up smaller as in the video. It helps if you put your bacon and salt pork In The freezer for 45min to 1hr first because this firms the meat up and makes it easier to cut into thin slices as room temp bacon and salt pork is too slippery to cut warm. I’ve learned the hard way lol.

I looked up "Mexican rice recipe" and found your video with your mom. 40 min later I've watched your video on fajitas, charro beans, and tamales. Now I'm going to the store to make some beans and rice because my mouth is watering so much lol! I grew up in TX and miss good mexican food. Can't wait to try it and thank you for sharing!!

So, I just watched your mom make Mexican rice and had to find this recipe since you mentioned charro beans. I knew there was a reason I purchased 8 lbs of pinto beans last week (seriously)... I just told someone the other day, with food prices rising... I am so glad that, culturally (African-American), I grew up eating what people are now calling 'budget meals'... I'm thinking we were never on a food budget growing up, my family just knew good food - My grandmother would feed a gang of grandkids with a pot of chicken and dumplings or beans and cornbread... We never begged for restaurant food 😁
On another note, Mexican cooking is so magical and life would totally suck without this incredible cuisine. Please keep sharing (and thank you)!

Bonus points for making the entire house smell like a pot of beans!
My Grandma/Abuela on my Dad's side ALWAYS had a pot of beans going in the kitchen and made fresh corn tortillas every morning. I think it's one of the earliest smells burned into my brain.
To this day if I walk into a house that smells like that, I know I entered a home, not just a house.

I have made a similar recipe for years. I soak my pinto beans overnight and then rinse in the morning. I saute some diced onion, bell peppers with bacon, adding garlic at the end, in my instant pot. Then add some chorizo and two chipolte peppers in adobo. I season it with paprika, thyme and Slap Ya Mama seasoning. I add some garlic broth made with Better than Bullion (Garlic) and put the lid on the instant pot and set timer for 20 minutes. (I don't have the patience to wait two and a half hours for dinner. I commend you.) Next time I make this I am going to serve it with your mom's yellow rice. Thank you for sharing your family recipies. I love to see what other folks are doing in their kitchens.
I just remembered that I have some shredded chicken in the frige that I need to use up. I am going to add this and try your pinto bean recipe to replace the hotdogs--and serve it with your Mama's rice for the game tomorrow. Go Gators!

Nice video, looks tasty - will definitely have to try! One thing, seeds in peppers contain no capsaicin (no heat) Leaving them in or taking them out will make no difference in heat. I take them out because they just taste bad. The heat is in the pith and capsaicin glands, not the seeds.

Arnie you make me HOME sick. I've been in Memphis for 35 years, retired a genuine Texacan from South Texas. Tex Mex arts are the best! I grew up on Charro beans and tortillas. Your recipe reminds me of me! Thanks for the joy of watching your video!!

Great looking recipe! My mom's recipe called for cueros and some beer, definitely added a depth of flavor and texture. Can be an entire meal if you add the scoop of rice and tortillas, good eating!
