  • Today I am making some delicious head cheese or brawn. Which is an old school meat terrine. This dish does not contain any dairy or cheese despite the name. Although this dish was created in Europe around the Middle Ages, it is quite popular in Vietnam as well. You can usually find this in banh mi, the famous Vietnamese sandwich.     Ingredients:
    1 pig head
    1 large onion
    2 carrots
    3 stalks celery
    10 sprigs parsely
    3 bay leaves
    2 tbsp peppercorns
    1.5 tbsp pink curing salt
    5 tbsp kosher salt
    enough water to cover
    Spice mix for the spicy head cheese: (for half of the total yield, if making all spicy headcheese, just double these portions)
    1 tbsp cayenne pepper
    1 tbsp dried Thai chili flakes (or 3 tbsp regular chili flakes)
    1 tbsp garlic powder
    1 tbsp chili powder
    1 tbsp white pepper
    1 tbsp onion powder
