    2 lbs 80/20 ground pork
    4 Tbsp ice water
    3 Tbsp fish sauce
    1 Tbsp vegetable oil
    2 Tbsp sugar
    1 Tbsp potato starch
    1/2 tsp ground white pepper
    3/4 tsp baking powder
    6 banana leaves cleaned, approx. 14 inch x14 inch • Preparing Banana Leaves
    Yields: 2 rolls, approximately 1 lb each

    I remember my mother buying steam pork rolls in the Asian store, now that I am grown I cant find any Asian store around where I live. Now I have a great chance on making it for me and the kids to enjoy as I when I was little boy. Great video and instruction on how to make it.

    Tasty, balanced recipe and easy-to-follow format. Your instructions regarding the freezing and pulsing method was spot-on which resulted in the intended springy texture.     Wow amazing! My mom made this too but she deep fried them instead steam. I used them for stir fried noodles or soup noodles . Very delicious! Thanks for sharing !

    Perfect time to try this recipe since we are having a natural freezer at the moment, it's -10 degrees C here. I will give it a try and if it turns out well, which I am sure it will, I will make bánh dầy too. :)

    I know tradition calls for banana leaves but I've seen it done without and simply using the cling wrap and parchment paper with twine.

    Hi, Thanks for posting. I have a meat grinder so I can grind my own Pork Shoulder. I'm wondering if I ran my meat through the grinder a second time with a smaller die before I mixed it, could I skip the multiple Food Processor steps?

    i have jist start to follow your recepies. and I would say that I enjoyed it very much. The latest that I have seen is your recepi for mooncake. They are easy to follow. But my problem is where to get the molds? Anyway, just go on with some more recepies. Really love them. Thanks.

    If I don't have access to banana leaves, how could I make this pork roll recipe successfully?

      Since I don't have access to them either where I live I'm going to try it with extra layers of oiled parchment paper and then the plastic wrap.

      @@dreeemer i made it that night basically substituting the banana leaf with parchment and made sure to oil the innermost one. I folded the ends just like she did as well and double wrapped in plastic wrap and it worked like a charm! I found for my stove top I had to steam in medium heat for almost 40 minutes until the loaf was firm.

    yum! I love eating cha lua with pickled carrots and daikon dipped in nuoc tuong va ot ^.^ But do I have to use banana leaf? It is hard to find it in my town.

    Chi Trang, em lam cha lua theo cach chi chi. My cha lua has not that " white" kinda color like yours. It's brown, but it taste delicious though ☺

      Hi Thanh, the brown color may be a result of the meat combining with the air. Did you buy the meat and use it right away or store it in the refrigerator for a day or two? A slightly brown color does not affect the taste em. Great job!

    Thank you so much for detail video instructions. I just made it and after cutting it in half I noticed my steam pork roll isn't as white. Mine has more of typical ham color look. Did I undercook it? Steamed it for 40minutes

    Made your beef balls and they turned out great but the pork roll didn't get chewy and crunchy at all. More like steamed meat rather than pork roll. The texture also wasn't smooth like yours. Any tips for what could be wrong? Thanks!! (They taste really good though!)

      The technique for making a "crunchy" pork roll is very similar to the beef meatballs. The crunch comes from processing the meat when it's cold and not letting it get warm. Also, if you can ask your butcher to double grind the pork, this will lighten the work load for your food processor and help to get a smoother texture. Try making smaller rolls, processing less meat and see if that works out for you. Good Luck Amy!

      Yes chi. If you can get your butcher to grind the meat for you, you can whip it using a stand mixer. Good Luck!
