I’m from the southeast, travel a lot for work around the world and I have to say Taiwan and South Korea have some of the best fried chicken I’ve ever had. (Sorry grandma but it’s true 😩)

他們家我每次訂真的都那麼漂亮，而且我這個怕肉臭的，還有怕柴的，真的很好吃，只是他們得要時間訂製，不是說要炸就炸，他們嚴格要求保持食材的熱度及新鮮。

我是做炸雞的，炸雞出來成色要好看，是真的要加一些過濾的回鍋油大概是新油70%回鍋油30%
天天新油，成本會很高，而且雞排成色會比較白，雖然這跟用的粉漿也有關係~~但大部份還是取決於油~~
並不是炸的久顏色就會好看，就算好看裡面都變柴了，大家還是放心那些過濾的回鍋油，不用太緊張
為什麼它醃的那麼黑炸起來確不會很黑呢？

Orange spice looks like paprika/chili mix, yellow spice maybe garlic. Ratio 2:1 Needs oregano too thou. Marinade for 24 hours. Then flour (salt and pepper) and fry.

A lot of restaurants are not this clean. Not sure if this is because they are being being filmed. However, it is nice to know one can work in a clean environment if they choose to. Trickle down from the management team. If everyone had the mindset that they are being filmed 🤔 🤷 😏 there would be less chances for food poisonings. Remember 'germs are our unseen enemy' and they can kill! Keep up the good work!
