As a Texan born and bred, i can say that some of us make in our own backyards on our own pits BBQ that would put the restaurant stuff to shame. Just saying, but yes overall some BBQ joints do it very well. Glad you came down!

Should be as your making a lot less food and its easier to control. Doubt you guys do it as well honestly because 99% of you could never cook commercially or to scale. Imagine giving a real chef all the time in the world to make his dish instead of pushing out order for a table. Best food you're going to get is from an experienced chef or old school traditions. Also ive been a 5 star Chef for 17 years.

One thing always makes me laugh about Texas is that the restaurant's don't even come close to some people's BBQ at home. 😂
The brisket, potato salad, dry crispy smoked chicken, and the wings is what you won't see on any video.
FYI: You've got a chance of tasting these around November and Superbowl Sunday, you just have to keep your eyes and ears open.
You literally feel privileged to eat some of those recipes because for some reason talented Texas people like to wait forever to make it. 😂

Pork belly is the same cut of meat as bacon.
It's bacon chunks with different seasoning.

    • @jeffreypayne7719
      @jeffreypayne7719 11 หลายเดือนก่อน

Bacon doesn't have seasoning. The reason bacon doesn't have seasoning is because bacon is naturally salty, so seasoning. It would make it a lot worse. You got smoked bacon, pepper bacon. All that crap, that's not seasoning.

Welcome to Texas! Happy for you and the experience you had eating BBQ. Every Texas BBQ family has their own sides recipes. So, I hope you don't hesitate to try other BBQ sides. I am surprised there were no BBQ beans. The pork belly trend started a couple of years ago as an answer to the lack of burnt ends for some places. Your reaction to biting into the beef rib is almost universal. lol Also, we typically make sammichs of the brisket or sausage with sauce, onions, pickles, and sometimes jalapeno. Hope you come back down for more memories.

Texas Monthly magazine ranked them the #1 BBQ place in Texas back in 2021 and they're still rockin'. People in line bring their chairs and coolers with adult beverages and chat with strangers, making new friends while waiting for that goodness. 😀

That's not a normal rib. If you get spare ribs, you get a rack of the, with several bones. Except for Chris Rock that one time, nobody eats one rib.
This was a tomahawk chop bone-in ribeye steak, slow smoked.
It will be insanely good, and that alone will more than fill you up. I grill ribeyes all the time. Grilled, not BBQ'ed. That thing is a beast that can easily feed two people, especially with all the sides and other meats. I would bet good money that you would not be able to finish that meat blob on your own in one sitting. It becomes a career eating that.

Turkey is dry when someone doesn't know how to cook. Real traditional Texas BBQ is all beef. The pork came in with Easterners and Chinese people. BBQ sauce is added after the meat is done and usually served on the side. We use Mesquite wood 🪵, Oak and Pecan. We're not big on sweet meats and sauces but because so many people are coming in from other states and nations the traditions are being eroded and the landscape is changing. I'm so glad you enjoyed the dinner and hope you will bring your viewers to try the cuisine.

The secret to any Texas BBQ is "low and slow". Meats are generally prepped with a Salt and Pepper rub (you can add other spices if you'd like) then cook for several hours over low heat (between 220°F and 275°F)...for instance, I'll smoke a small 5-8 lb brisket for 7ish hours until the internal temp falls around 205°.
The Texas thought on sauce is usually "The sauce is there if you want it, but a properly cooked meat really doesn't need it"
Its all preference. I'll sauce pork ribs, but beef I'll usually go dry rub.
    Looooove TX BBQ!

Pork belly is just bacon uncut essentially. Everyone has had it before but just not in that format. If you have ever had Phillipino food, pork belly is what also is Tocino which is amazing as well. Kinda pricey to get at the store if you get the natural/organic meats but if you don't care about the source it's cheaper than to get.
