The donuts absorb less oil if you use that brandy because ethanol has a lower boiling point than water. So the dough stops absorbing oil faster (when you fry food, it usually absorbs oil until the water inside starts boiling!)

Great video, and these look great. But really no need to sift AP flour, cake flour, yes. Also, vanilla extract because it's mostly scented alcohol, will pretty much dissipate during baking and won't leave much flavor at all.
If you want vanilla flavor in your baked goods, best to use vanilla beans. It's more pricey, but worth it.
I considered splurging on the beans! maybe next time! thanks for all the great tips.
@@SarahsVeganKitchen what about vanilla paste? Does it have the same flavor? I found some not too expensive at Marshalls and I find the flavor really strong. Certainly not as expensive as a couple of beans and brings more product.
