    I picked up one of those at Costco yesterday, cooking it up on my Oklahoma Joe Bronco today. Tough to beat some beef chuck ribs. Great cook!

    Thanks to your content and that of a few other BBQ channels my first BBQ after moving house blew the neighbours minds. Did a small brisket, Beef short ribs and baby back ribs with pig shots & hassleback taters as a side. Previously my BBQ's were cremated sausage & burnt burgers. Thanks to you - keep em coming I love to watch and try to emulate.

    Ry, thoroughly enjoy your videos. From the brisket burgers to these beef ribs always entertaining and informative. I use to want to save these types of meals for special occasions. Now I’m discovering that cooking these meals types of meals are the special occasion.

    Truth be told, I do not think I have ever eaten that type of beef rib. I've always "pigged out" on the pork variety. I'm going to have to try them on my off set, if I can find them. Good video.

    Hey Ry…I picked up a package of bone-in ribs at Costco this week, but they are cut differently than how yours are in this video…They are either cut one or two at a time. I’m wondering if you think this will make a difference in smoking them, such as length of time or if the smoking method needs to be modified at all. Thanks for any advice you may have.

    When they're in that form, with the long bones, you're right, they're not short ribs. The proper name is BEEF PLATE RIBS. I'm a BBQ AFICIONADO and a BBQ'OLOGIST.

    Sorry if I missed this but what temp did you preheat oven to for resting?

      For resting the oven was just turned off after the beef ribs reached tenderness. The oven was at 250 F during that time.

    If the smoker is at 250deg why not just leave the ribs in it

      At that point you have all the smoke you need on them so all you're looking for is heat and oven is fine and no need to do fire management on the smoker. Works out great.

      Sometimes I do just that. But using the oven is convenient and conserves fuel. Also, it was getting dang hot outside 😊

      After smoke is applied and the wrap is done...then a BTU is a BTU...oven is just fine.
