    I put aluminum foil on my shaker and its such a genius idea. I've convinced all my bbq buddies (and most importantly my dad) to do this as well.

    For this old boy, the BBQ season never ends. I use my off-set smoker year round. For Christmas, I plan on smoking a Prime Rib roast, whether it be rain, sleet or snow! As always, enjoyed the video.

    I think I'll make some beef ribs this week if I can find some.
    I cook on a WKG, with the Mallory gear you suggested. It can get quite crowded inside.
    one day I think I'll purchase an offset, something similar to what you used.

    Those looked totally amazing!!!. I could almost smell/taste them. Just did a rack of Pork Spare Ribs. Need to go get me some Dino's. What would you think of adding some Beef Tallow at the wrap. Extra layer of goodness. Thank you for sharing.

    Do you find a notable difference between beef short ribs vs full plate beef ribs?

      I didn't notice any difference other than a bit more sweetness from the balsamic :)

    What was your pull temp when you took them off the smoker low 200s???

    These look great, will try this fall using a weber. Water + beef stock makes a nice spritz too
